Libby's® Pumpkin Roll with Cream Cheese Filling

The recipe that I use is very similar to this one... it is always a huge hit at thanksgiving.. my daughter talks about it all year long.. After the rolls are completely cooled, I always wrap them in plastic wrap and then foil, and throw them in the freezer. It is a lot easier to cut when it is still a little frozen. I normally make them a week or 2 ahead of time. They keep really well. I like to cut each roll in half, wrap in a decorative towel or napkin tie with a piece of ribbon or raffia and give to friends/neighbors as a thanksgiving treat!

Apples by the Fire

The were great! We used red delicious apples since my daughter dosent like granny smiths! And i kept thinking that they woudl be really good with some pecans inside too... or a little bit of chocolate.

Campfire Banana Splits

I made these for my family on our camping trip and they loved them! We used regular chocolate chips and peanut butter chips! I'm sure they will become a regular item on our camping menu!

Crispy Coconut Chicken Fingers

We love these! They added a wonderful tropical flair to my luau! Everyone adored the dipping sauce- i did it with apricot-pineapple preserves, it's even better than just plain apricot! I grilled them this time, but the coconut burnt on some! They were still very yummy though! ANd instead of drizzling the melted butter, i just hit each one with a few squirts of spray butter- very easy and less messy than melting butter!

Mango Papaya Salsa

This was a HUGE hit at my Luau party! Everyone loved it! I added the lime juice to keep the avacado from turning, and i used red onion! I will definitely make this again!

Awesome Honey Pecan Pork Chops

When i saw this recipe I thought it might be interesting, I was looking for something different to do with pork chops. I was delightfully surprised that my family LOVED it! I added the broth and soy sauce as one of the reviews suggested and cooked it for a few extra minutes just so the nuts were almost soft, but still a little firm. It was great, and I'll be adding it into my normal rotation! Thanks!

Sweet and Sour Pork Patties

I personally liked the pork patties. They were easy to make and cooked up in no time and quite tasty! But my husband didn't really care for them- I think he couldnt get past the ground pork part!
