I'm currently expecting my first baby, so I'm always on the lookout for healthy and delicious recipes for me and my husband.
My favorite things to cook
I love making all kinds of pasta dishes, stir fry dishes, one dish meals, etc. I'm also always looking for great dishes that do not use meat. We are not strictly vegetarian, but we have drastically decreased the amount of meat that we eat.
My favorite family cooking traditions
Christmas Eve dinner at my moms: Bread shaped like a bear and my mom's homemade beef and vegetable soup.

Pineapple Enchiladas
Excellent recipe! I added a 1/4 cup of chopped red onion to the mix and used only an 8oz can of crushed pineapple (that was all I had). I used the other filling amounts as noted in the recipe...it filled 4 tortillas. I also poured a 10 ounce can of Mexican-style diced tomatoes over the top of them along with the enchilada sauce. Yum! Will definitely make again.
