Grilled Peanut Chicken

I really liked this recipe. I don't usually care much for boneless, skinless breasts; I find them dry and tasteless, but this recipe made them moist and flavorful. I only cooked 2 breasts; there are only 2 of us, and I didn't want to heat up the grill for just 2 breasts, so I broiled them in my toaster oven. I always have to play with recipes, so I added about a tablespoon of rice vinegar and about 1/2 teaspoon of sugar to the sauce. I used all the sauce on the 2 breasts and they came out great; rich and delicious, and the sauce carmelized beautifully. I served them with Sesame Noodles from this site, and braised bok choy. Excellent meal.

Kielbasa Alfredo

I normally shy away from recipes that call for canned soup or bottled sauces as an ingredient, but I was intrigued by all the good reviews this recipe got. I should have followed my instincts. Maybe it was the brand of alfredo sauce I purchased, but it was a well-known, high-end brand. I should have tasted it before I dumped it into the pan. It had no flavor that came close to alfredo sauce, and the texture was gluey, almost gelatinous. I tried to fix it by adding some milk and some sauted onions and garlic, but it was no use. My husband ate his, but then he'll eat anything. I definitely will not make it again.

Autumn Spice Ham Steak

This was delicious and very easy. I followed the recipe pretty closely except I peeled the apples and added a squirt of horseradish sauce to the maple syrup to cut the sweetness a tad and add a bit of bite. My husband loved it and there were no leftovers. Thanks for the recipe.

Frosty Pineapple Salad

I loved this stuff! I added a small package of instant coconut pudding, because coconut/pineapple is one of my favorite ice cream flavors, and this just seemed to cry out for it. The buttermilk added just the right tang. This was very good.

Parmesan and Basil Chicken Salad

This was delicious! I boiled 3 large bone-in, skin-on chicken breasts with some salt, garlic powder and bay leaves until nearly done. I have a fear of overcooking chicken white meat, so I let the residual heat finish the cooking, and the meat was nice and moist. I boned and skined the meat and cut it up small. I chopped 2 of the celery stalks very finely and added them to the chicken, and pureed only one of the chopped stalks. I also added chopped red onion to the puree as suggested by other reviewers, and used reduced fat mayonnaise and grated fresh Parmesana Reggiano. I served the salad on sandwich sized croisants with sliced tomatoes, and this was nummy! Much better than the run of the mill chicken salads with nuts and fruit. I will definitely make this again and again.!

Cheddar Baked Chicken

The only cereal I had on hand was Coco Pebbles and I didn't think those would taste too good, so I left out the cereal. Used Panko instead of regular dried bread crumbs and a mixture of dried herbs. I also used bone-in, skin-on chicken breasts (horrors!) and this came out great.

Army SOS Creamed Ground Beef

I have never cared for the taste of plain, unseasoned ground beef, so I liberally seasoned the browning beef with garlic powder, Lawry's season salt and pepper. I also added a half an onion, diced, to the beef. I really didn't measure the Worchestershire sauce, just let some bobble on out of the bottle, but I'm sure it was more than 1/4 teaspoon. I also added a cup of frozen peas with the milk. I served this over refrigerated jumbo whomp biscuits from a cardboard can. Very comforting and good. Will definitely make again.

Screaming Potatoes

I made this for dinner last night and guess what? It tasted like, um.....cooked potatoes! I followed the recipe exactly and they never made a peep. Not even a whimper, much less a scream. They'd have to sing a little song and do a little dance before I'd bother with this again.

Pan Fried Halibut Steak with Light Green Sauce

I don't like it when recipes don't give specific measurements like "one lemon, juiced", The amount of juice one lemon contains can vary greatly. Mine must have been extra juicey because I thought this was way too lemony. My husband raved about it though. The halibut was very good after I scraped most of the sauce off of mine. If I make this again, I will add the lemon juice one tablespoon at a time.

Grilled Corn on the Cob

I couldn't really tell the difference between this and corn cooked on the stove. Next time I grill corn, I won't wrap it up so much that the taste of the BBQ can flavor the corn.

Slow Cooker Adobo Chicken

I used chicken thighs from which I removed the skin (I fried the skin up and fed it to the cats, they were in kitty heaven) Otherwise I followed the recipe more-or-less exactly except to add bay leaves and peppercorns as suggested by other reviewers. It tasted even better than the adobo my Filipino brother-in-law makes. My husband who grown weary of my experimenting and has been asking me to make a few dishes that "originated on this continent", absolutely loved it. I served it with garlic rice and sliced mangos drizzled with Mango/Chile Vinegar from Trader Joe's. Pay no attention to the bad reviews. This was delicious. Thanks for the recipe!

Caribbean Sweet Potato Salad

I doubled the recipe except for the cucumber, because I only had one, and put in some chopped celery. The dressing seemed too limey to me so I added a small blob of mayonnaise and about a tablespoon of sugar, which did the trick. I really liked this, but my husband, who generally likes just about everything didn't care much for it. He expects his potato salad to have white potatoes, hard boiled egg, and a rich mayonnaise dressing, like his mom used to make. Now I'm sorry I doubled the recipe. Thanks, though, I thought it was tasty.

Baked Fish with Shrimp

I left off the shrimp because all I wanted was a fish recipe to use up some red snapper I had in the freezer. I followed the suggestions of some other reviewers and added some pressed garlic and rehydrated dried onion flakes to the butter before adding the flour. I also added a splash of sherry to the finished white sauce. I only had one pound of fish (there are only 2 of us) and since it is over 100 here in Las Vegas, I baked the fish in the toaster oven so as not to heat up the kitchen too much. I sprinkled some paprika on the sauce-covered fish before adding the cheese, and placed a couple of thin lemon slices on each fillet along with a sprig of thyme before baking. This come out delicious and my husband really liked it! Exactly what I was looking for. Thanks!

No-Fuss Pumpkin Cake

I thought for sure I had a yellow cake mix in the cupboard, but no. So used a spice cake mix instead. Otherwise I followed the recipe exactly and this came out great. What a simple way to make cream cheese frosting! Thanks for the recipe!

Broccoli Salad I

I have been making this salad for years. A friend of mine brought it to a potluck and I got the recipe from her. I usually increase the broccoli, I don't really measure it, but I think it's about 6 cups. I cut the raw bacon into small pieces with kitchen shears, then fry it all at once, stirring occasionally, until pretty crisp. My cats go nuts, hoping I'll drop some. I have to move quick if I want some salad, between my husband and the cats, this goes quick. I made some Monday and it was gone Tuesday morning. Just bought some more broccoli and bacon to make it again. Great recipe!

Kielbasa Cabbage Skillet

I am recovering from extensive foot surgery and have been craving comfort food. This really hit the spot. I did make some changes, though. I blanched some cubed potatoes and added them with the onion (I used a whole one). I left out the green pepper, not because I don't like it, but I wasn't in the mood. I used a whole kielbasa, and a whole head of cabbage, because I wanted lots of leftovers. My husband can't cook, but he can chop, so I made him cut up the vegetables, because I'm not supposed to be on my feet for long. I also used nearly a whole stick of butter, but hey, I need the calories to heal, right? This was scruptious! Exactly what I was craving, and we loved the addition of the potatoes. Oh, I also added some garlic and some red pepper flakes. Very tasty! Thanks.

Chocolate Banana Bread Pudding

I thought the idea of chocolate banana bread pudding sounded great. Then I read the recipe and saw that there was only one measly cup of chocolate chips in the recipe. I searched further and found another recipe that was needlessly complicated, but it had one idea I liked, and that was to toss the dry bread cubes with 1/4 cup of melted butter, and then toss that with the 1 cup sugar and 1/2 cup of cocoa. I increased the bread to 6 cups, and the milk to 3 cups. I added vanilla and one more banana, then baked this in a 9 by 9 baking pan for 35 minutes. It came out beautifully, rich and chocolaty, but not really too close to the original recipe. It needed way more chocolate to satisfy my craving. Oh, I also used one whole package of chocolate chips instead of one cup.

Sirloin Steak with Garlic Butter

OMG!! I can't believe I never thought of this. I am a huge garlic lover; I put it in everything except dessert and coffee. This was fantastic! I seared a top sirloin, let it rest, then sliced it and poured the garlic butter over the slices. It was like I died and went to garlic heaven. Wonderful recipe! I can't thank you enough! (to other reviewers: this is not a marinade, it's a sauce. Read the recipe!)

Soul Smothered Chicken

I just don't get all these people who insist on using boneless, skinless chicken breasts for everything. A dish like this screams out for bone-in, skin-on chicken. If you're afraid of a whole chicken, buy an already cut up chicken. The skinless, boneless breast is the driest, most bland of all the cuts of chicken. I would never use it for a dish like this, which was wonderful, by the way. I just increased the spices a tad, and we loved it!
