Corn Dog Muffins

These do taste just like corn dogs! I sliced the hot dogs lengthwise, then cut off one third of the length. Placed two slices in mini-loaf pans...fit perfectly. They cooked in the time as stated, however, the hot dog ends curled up too much. Still tasted good. Will cook in mini-muffin pan next time. Great football-watching-at-home food. We put mustard on them.

Baby Back Ribs

Wow! I wanted to post a picture, but they disappeared...nothing left but bones. I marinated the ribs with my favorite bbq sauce for a short time, baked as directed, and finished on the grill. I did go to YouTube to watch a video demonstrating how to remove the membrane on the back side of the ribs....very easy to do, once you know how. Maybe there is a demo on this site, I didn't find one.

Aunt Blanche's Blueberry Muffins

These are good. I noticed this recipe has the exact same ingredients as many other blueberry muffin recipes on this website. This must be the "standard way". My muffins were very flat, not the beautiful domed ones I had hoped for. Maybe I should check the date of my baking powder BEFORE I bake. October '08! No wonder the muffins didn't rise that great. So, I'll try again..........

Cadillac Pimento Cheese

Very good pimento cheese. I've never tried it with cream cheese before....I like it. Pimento cheese on rye bread with sweet petite pickles on the side and some kettle chips....YUM.

Spaghetti Salad III

Our extended family LOVES this cold pasta salad. However, like others, I use McCormick's Salad Supreme - to taste, and I omit the cheese. We just had this at our July 4th celebration. We've used fat-free Zesty Italian, Reduced Fat Zesty Italian, and the real deal Zesty Italian dressing. While the fat-free it OK, the real deal is all that.

Key Lime Pie VII

Tangy-sweet deliciousness, plus it doesn't get any easier than this. The hardest part was squeezing all the limes. Next time, I'll use Nellie and Joe's Key Lime Juice. I saw it featured on a Food Network show featuring the Florida Keys, and I found it at my local grocery store.

Tainted Fruit Shots

My cousin, the gelatin shot queen, taught me the trick of lightly spraying the cups with ***original Pam***...(only original Pam works she says), before adding the liquid. The shots will slide out like they are supposed to. Bottoms up!

Ramen Coleslaw

Yummy. I omit the almonds due to allergy, but followed the recipe otherwise. Light and crunchy with a subtle vinegar bite. We had this with pork barbeque sandwiches and hash brown potato casserole. Great summer fare.

Baked Teriyaki Chicken

Very good. Will definitely make again. I used skinless, boneless thighs, so baked at 400 degrees - 20 min. covered and 20 minutes uncovered. Also, I lined my baking dish with Reynolds non-stick foil...and I'm glad I did. No mess.

Garlic Chicken

Very good. Very easy. I used 2 tsp. minced garlic (from a jar) and butter. The garlic smelled very strong while cooking, but it tasted mild. I used Parmigiano Reggiano, good grief that is expensive cheese....I've never bought it before. Anyway, I digress. I will make this again.

Roast Sticky Chicken-Rotisserie Style

Pork Chops with Raspberry Sauce

I made this for the fam tonight. I followed the recipe exactly, except I added a small amount of corn starch (mixed in cold water) to slightly thicken up the sauce. We all enjoyed it, along with strawberry-spinach salad and mashed potatoes.

Aunt Teen's Creamy Chocolate Fudge

I have never made fudge before. I have eaten perfect, smooth, creamy fudge, AND yucky, gritty, hard fudge. This recipe made some of the best fudge I have ever tasted. My husband agreed. I couldn't believe I made it!

BBQ Pork for Sandwiches

Phenomenal! Had extended family of 10 over and everone raved. Husband said it was the best barbeque I have ever made. I used Famous Dave's Rich and Sassy sauce. I only used the crock pot. I will definitely make this again.

Bob's Awesome Lasagna

I have been making this recipe for years. It is a recipe that you really don't have to measure anything...just assemble...plus I happen to love jarred pasta sauce. The secret to cutting and serving a lasagne square that doesn't fall apart, is to let it set up for about 20-30 minutes after removing it from the oven. I use an extra jar of sauce for "gravy" to pour over the top.

Cake Balls

Months ago, my teenage daughter raved about "cake balls" she had at a friends house. She explained them to me...but I just couldn't seem to grasp the concept. Lo and behold, I stumbled upon this recipe. I made lemon cake/cream cheese frosting, dipped in white chocolate. Review: too time consuming, toooo sweet. Great idea, but it just didn't work for me. I won't make them again.....but my daughter liked them.

Speedy Ice Cream

On a whim, immediately after reading this recipe, I went to the kitchen to make it. It sounded like a fun thing to do on a hot August day. I did sub granulated Splenda (the kind used for baking)and 1% milk for a low cal version. I also have a good quality vanilla. This tastes just like "snow" ice cream, as those of you who live in climates that experience snow have probably eaten at some point in your life. It brought back great childhood memories of fresh fallen snow, transformed into delicious frozen sweetness. I thank you for that.

Cucumber-Mango Salsa

This recipe is very similar to the mango salsa served on a Mexican chain restaurant's Mango Salad (the manager told me how to make it). In that recipe they add some chopped red pepper, red onion instead of white, and don't use garlic. So, I use red onion, add chopped red pepper, and omit the garlic. It is very refreshing, and I now have mango salsa cravings! Hint: If you don't want to peel and dice mangos, many grocery stores have bags of chopped mango in the frozen fruit section, however it is a little pricey.
