Oven-Fried Catfish

I have made this - oh probably 10 times in less than three months now. My husband absolutely loves it. We are from the south and know good catfish. I love having an easy recipe I can do in the oven. I make this almost weekly now. I do have to turn on the broiler for 5 minutes or so at the end to get it truly crispy. The mix makes enough for 3 large filets every time I make it.

Enchilada Sauce

Excellent. Great flavor and depth - I needed something without tomato sauce and it was a hit with the husband and kids. I'm going to make cheese enchiladas with it sometime.

Pear Walnut Chicken

We thought this was good, but a little on the bland side. The sauce could use some kind of additional flavor, though I'm not quite sure what. Next time I will marinate the chicken with a bit of the soy sauce for flavor and then saute it until cooked, to make it more tender. I think simmering it makes for tough meat. I will add to the thickened sauce at the end.

Zucchini Brownies

These were really good - you couldn't even tell the zucchini was in there (I thought it would be like zuc bread and you wouldn't taste it but you could see and maybe get a string of it now and then, but it disappeared!) husband and kids both loved them, too. I must have measured something incorrectly, because my "batter" was crumbly it was so dry and I had to press it into the pan. They were still good, but the bottoms were still crumbly rather than moist, so next time if it is that crumbly I will add a little milk or something. We didn't do the icing, as hubby doesn't like icing, so can't comment on that. Definitely will make again!

Bread Machine Bagels

Really good. I did 1c of whole wheat flour and 2 c bread flour, and they were still really yummy. I may try more WWF next time. I let them rise 30 minutes and boiled them longer per other reviews. So easy - and the kids loved them too. I will probably try making bagel chips with them too sometime.

Goldenrod Eggs

Really yummy! I needed a new way to eat fully cooked eggs while I am pregnant, and this fit the bill and was really good. Sometimes we do toast and gravy for breakfast, so this is basically the same with hard boiled eggs thrown in, but a great way to add in protein!

Chicken Enchilada Casserole II

I thought this was good. My husband thought it was just okay - but he doesn't like cassarole. The kids ate it! I toasted my tortillas to keep them from getting soggy and it helped. I would have gone with corn, but can't because of allergies. No other changes - if you like these kinds of cassaroles, you'll love this one!

Butter Cream Frosting II

Really good! I had to add a little extra milk to make it workable, but the texture and flavor were perfect. They dried to the touch in just 30 minutes. To make sprinkles stick really well make it thinner.

Cake Mixes from Scratch and Variations

I thought this was very good! For simplicity I used oil, especially since others said that was good. I didn't make any other changes. I was making cupcakes, and filled them 1/2 to 2/3 full, baked 15-20 minutes and they were perfect. I frosted them with "butter cream frosting II". Yummy!! So mutch better than a mix.

Delicious Ham and Potato Soup

Really good. I did make a few changes: 1) I did one stalk of celery cut into 3 big chunks, and some big chunks of onion to reduce chopping, then I removed them after boiling so we got the flavor but no chopped veggies in it. 2) I doubled them ham, and still thought it could have used more. 3) I did a bit more potato (2 medium potatoes was bout 4 c I think.) 4) I only had bullion cubes, so I did 5 (equiv to 5 t granules) and omitted the salt b/c of the extra ham. 5) Reduced pepper to 3/4 t I served it in bread bowls with cheese sprinkled on top. Wonderful, however this would serve 4 adults MAX. Never ever 8 servings!

White Velvet Cutouts

I thought these were average cookies. I also used light cream cheese. They were very easy to roll out and cook. Refrigerate them a bit before putting them in the oven if they get too warm to prevent spreading. I was very pleased that they didn't spread much at all. The negatives for us were: 1) too much butter made for a very crunchy/crumbly cookie and a bit greasy 2) not sweet enough - I didn't want a very sweet cookie but I didn't like these without icing 3) just not a whole lot a flavor. they are a lot like cookie bouquet cookies I think - and I'm just not a huge fan, so I guess you just have to like the right kind of cookie!

Royal Icing I

Perfect icing for my gingerbread men. Like other reviewers said, it made a TON of icing. I decorated probably 50 gingerbread men and didn't even put a dent in the icing. Easily 1/3 it or 1/4 it. I also used a pasturized egg white product from the refrigerator section near the eggs, so I wouldn't worry about the kids. It worked quite well. It may have been more runny because of this - next time I will make it thicker. Hardened up perfectly though!

Sugar Cookie Frosting

Really good. I subbed butter for the shortening as others did, because I didn't think it would taste good. I started with 3 T milk so it wouldn't be too thin. I was making red icing so I knew it would thin a lot with the food coloring. The red was perfect, I think the the pink was a bit too thick. It dried up nice and hard in a few hours. Great taste. I decorated 45 heart cookies and only used about half the icing (I didn't cover all the cookies, though - about 2/3 I just did detail icing on) It was wet enough for sprinkles to stick very well. Great icing!!

Candy-Coated Milk Chocolate Pieces Cookies I

I thought these were great. I used butter instead of shortening because I avoid shortening. However, shortening makes for prettier, thicker cookies. Butter makes them spread out. The flavor was wonderful, mine needed to bake a little longer - maybe 15 minutes or the middle wasn't done. I think you could use even more "candy coated chocolate pieces". Oh, I would also make them smaller, so that they made more than 12 cookies, but that's personal preference.

Cranberry Swirl Coffee Cake

I thought this was quite good. I halved it to use up half a can of cranberry sauce I had on hand and did it in a square pan. I had trouble "swirling" the cranberry sauce. Next time I will double the cranberry sauce and just mix it with the batter . It would probably be easier in a tube pan though. A nice change of pace and great for thanksgiving leftovers.

Spiced Pumpkin Seeds

Loved these pumpkin seeds. Used butter rather than margarine, and added some ceyenne to spice it up. A pie pumpkin gave us about 1 c seeds, and it only took 20-30 min to cook them adequately.

Vicki's Hush Puppies

These were as good as any hush puppies I've had, and I loved hush puppies - I have had all kinds. A few changes: we only did 1/4 c sugar, added salt and pepper, and added 1/4 c buttermilk. Substitute green onions if that's how you like your hush puppies.

Crispy Fried Fish

Everyone's favorite catfish at our fry for the wonderful flavor. Cornmeal lovers preferred "Will's Spicy New Orleans Catfish Fries". We added 1 t salt to the cracker mix, soaked the fish in the batter while our oil heated up, and used cracker crumbs. This fish doesn't stay crispy, so eat it fresh out of the oil!

New Duchess Spice Cake with Maple Buttercream Frosting

Perfect! Spice cake is my granfather's favorite cake and I made this for his birthday - he loved it. I did make a few changes based on reviews and personal preference: did 1/2 whole wheat flour, 2t cinnamon, 2t nutmeg, and 1/2 t cloves, substituted butter for shortening and added 1/2 c applesauce. My grandfather loves penuch icing so I did that instead of the buttercream.
