Sweet Dinner Rolls

Wowzah! I made these for a dinner party and they were gone in a few minutes. Light, fluffy, sweet but not too sweet. The best roll recipe!

Excellent banana bread - best recipe I've found. Very moist. I've made this both as a loaf and as square muffins (cut the time almost in half for the muffins). I've even made this in a glass 8x8 pan when I was desperate. As long as you watch it in the oven, it turns out fantastic.

Baked Ziti I

Yum. This is a great recipe to feed a crowd. I used penne because ziti was nowhere to be found at my grocery store. Next time I'll skip the meat and enjoy it vegetarian style.

Pizza Crust I

I enjoyed this simple, few ingredient recipe. I added a pinch of Italian spices to the bread machine to "kick it up a notch." My husband thought that the crust was too puffy. So, next time I may decrease the yeast a bit or try to spread the dough thinner.

Cinnamon Rolls II

My family enjoyed these cinnamon rolls, but they didn't have enough filling for us. Next time, I'd double the yummy stuff inside. (Also important to note: I halved the recipe. Otherwise the rising dough would have overtaken my bread machine.)

Bake Sale Lemon Bars

These were delicious - the perfect lemon bars. Watch your oven closely though, mine tends to run hot and the sides were browned a bit much for my taste.

Chicken with Lemon-Caper Sauce

Delicious and easier to make than expected. Tastes just like my favorite dish from a fancy restaurant in Salt Lake. I used white cooking wine, which worked fine. Next time I'll pound the chicken or cut the breasts in half.

Macaroni and Cheese V

Great macaroni and cheese recipe. I made it without the bread crumbs and without the baking step. I also enjoy this recipe with white cheese (mozzarella, etc) and a dash of Cajun seasonings.

Chicken and Asparagus Bundles

Easy to make, looks great, and (most importantly) delicious. This is a great recipe to keep on hand for company. I brushed the asparagus spears with some of the herb / oil mixture before rolling the chicken. If I were to make it again, I'd marinade the spears in the mixture an hour or so beforehand.

Cucumber Sandwiches II

I actually made these as real sandwiches, with the cucumbers in between two slices of crust-less white bread. I soaked half of the cucumbers in vinegar and added some black pepper for those who wanted a spicier snack. The sandwiches were a huge hit at girl's night and even more popular that the chocolate fountain!

Chocolate Mint Dessert Brownies

I made this using a boxed brownie mix, as was suggested by other reviewers. For the mint flavoring, I used a bit of mint extract instead of the liqueur. It came out great and was even better the day after. For the future, I'll remember to use green food coloring to get that minty look, if I use the extract again.

Pesto Chicken Florentine

I made this for guests and received many compliments as well as a request for the recipe. For the sauce, I simply added a bit of dry pesto sauce mix to the Alfredo sauce mix. I also used Parmesan cheese instead of Romano. Will definitely make this again!

These potatoes are very easy to make and taste great. I leave the skins on like they do in a number of restaurants. I often make them without the additional cheese and they're still tasty.

Florentine Stuffed Chicken

This is a keeper; something I'd be proud to serve when entertaining. Plus, it's very easy to make. I used fresh spinach (cut into smaller pieces). I rubbed the chicken with rock salt and Italian herbs before stuffing and threw a bit of cilantro on top. Including a bit of mozzarella as stuffing also improved the flavor. Delish!
