Italian Summer Squash Polenta Bake
I agree with baking the polenta. I made this for a dinner party and everyone loved it and asked for the recipe.

Mexican Chicken Kiev
I love this recipe and use it all the time. When I'm in a hurry I substitute pepper jack cheese instead of the green chiles and jack and it turns out just as good.
