Split Pea Soup
Thought I'd give this a try, as it is good comfort food. Simmered the peas on the stove for about 3 minutes, then soaked for about 1.5 hours before adding ingredients and cooking futher. Added frozen baby carrots, dash of thyme and rosemary, black pepper, finely chopped onions, & real bacon bits for flavour. Didnt have celery, ham or potatoes, and the texture and taste were still great! DH liked it enough to take to work. A success. thanks for sharing.

Orange Cream Fruit Salad
Made this for a work party. Absolutely flavorful, rich-tasting, like a "dreamsicle" pop. I modified a few things, based on reviews--cut back on the milk to 1/4 cup, drained all juices from canned veggies to prevent fruit from browning, added red seedless grapes, sliced apples, strawberries, fresh pears. You can play around with this recipe and it just delicious. Better than the Pistachio dessert. A winner! Thanks. Alison

Ali's Greek Tortellini Salad
I tried this for a work party and made a few changes: added grape tomatoes, imported olives, flavored feta cheese--basil/tomatoe and herb flavor--balsalmic vinegar and the red wine vinegar, scaled down on the olive oil, sprinkled some Italian herb seasoning, a bit of fresh garlic. Bought the three-cheese tortellini and cooked it. Be sure and dry the baby spinach thoroughly with paper towels. Otherwise, it gets too soggy. It was a refreshing change. Thanks. Alison
