Roasted Vegetables
We liked the taste of this, but it cooked a LONG time. I realized my potato chunks were too big, but even so, it baked for just over an hour, and that was using my new convection oven. The other veggies were done well before the potatoes were. My kids turned up their noses at the sight of this, but they actually did eat it once it was on their plates. DICE your potatoes, and this will probably cook in about 40 minutes.

Navy Bean Stew
A pound and a half of purchased Italian sausage has 10,000 mg of sodium or more- 5 times the daily limit! and canned corn is high in sodium too....Unless you make your own salt free sausage and use fresh or (carefully selected) frozen corn I can't understand how this would work for someone on a low salt diet. 4 stars for taste, 1 for suitability for low salt diets.

Italian-Style Round Steak
The meat was really tender, but I think the sauce needed lots more spices. It was too bland for my taste.
