A few years ago, I was making beef stew in the crock pot. I wanted to thicken it up without using flour so I went to the store and picked up what I thought was cornstarch. (I bought it in bulk) I used about 1/4 cup and stirred it in. It turned out to be cornmeal.

Baked Ham
This was the easiet ham I have ever made. I didn't have any oven bags on hand so I just poured the soda over the ham in the pan and covered with tin foil. It was so quick and easy I couldn't believe it. I covered it for the first hour and then left it uncovered for the second hour. I also basted it every 30 minutes. My husband doesn't like ham and pineapple (I know... weird), so this was the next best thing. Next time I will try it with Diet Cherry Coke. Yum!!

Sausage Egg Muffins
This is an absolutely wonderful recipe! Great on the go too. I admit I did substitute some things... I used bacon instead of sausage, added green pepper, onion, tomato and cheese. All in all a great base recipe to make as is or adjust to your liking. The next time I make these I just might have to try a few different types. Ham, spinach and feta... or jalapeno, cream cheese and avocado... or green chiles, jack cheese and tomato... oh the list goes on and on. Thanx again!

Unsloppy Joes
This was a wonderful spin on regular sloppy joes. Like other reviews suggested I cut back on the chili powder to 1 tsp. I just felt like 1 1/2 tbsp was a lot. I didn't add the carrots either, but I doubled the other veggies to about a cup each. I confess that I did add a lb of ground beef so that way my husband would eat it. I also added a splash of worcestershire sauce, a tbsp of soy sauce and about a 1/2 cup of ketchup. That really gave it the sweetness that it needed and helped hold it together more. BTW - It was great the next morning with a fried egg and hashbrowns on top served open face. :) Will definitely make this again. Thanx!
