Pfeffernusse Cookies

Absolutely delicious pfeffernusse, taste quite authentic, just like the ones you buy at the store but better. And so easy to make. These definitely won't last!

Easy Oatmeal Muffins

Great basic recipe - finally a muffin that isn't a cake!!! I didn't even use oil, subbed some unsweetened applesauce instead, and they came out moist and delicious.

Tomato-Curry Lentil Stew

Reviewed: Sep. 22, 2009
This is delicious, quick, and easy! I added extra curry and a bit of dried basil. I also used an entire can of tomatoes. It came out delicious, especially for such a simple and easy recipe with so few ingredients. Can't wait 'til tomorrow for leftovers!

Favorite Banana Blueberry Quick Bread

Reviewed: Aug. 21, 2009
This turned out really good! I doubled the blueberries and used butter because I had no shortening, but otherwise I kept it the same! Everybody seemed to enjoy it. My only problem was how long it took to bake, finally after about 1h15min I took it out, but the center was still a bit wet once I cut it. Oh well, I kinda like it gooey anyway!

German Apple Cake II

Reviewed: Apr. 30, 2009
Not a bad cake, but not outstanding or anything, as I would have expected based on the reviews. I agree with another reviewer that it wasn't exactly very "apple-y" - really, it was too sweet to even notice the apples much. Very moist and easy to make, but not a massive hit. Just good.

Summer Corn Salad

Reviewed: Jan. 19, 2009
Easy and delicious. I used defrosted frozen corn kernels - about 6 cups worth. I also used red onion, it was giant so I only put a half or else it would have been super onion-y! I also chopped up a jalapeno and sweet red pepper and added those. Turned out delicious! Also didn't need all of the oil, only used about half, as others had suggested. It went over well at the potluck I brought it to!

Mashed Sweet Potatoes

Reviewed: Dec. 28, 2008
I took the advice of another reviewer and used 1/4c brown sugar and 1/2c honey because I had no maple syrup. I didn't have to add any milk, it was already liquidy enough. It turned out well and was really easy with the mixer doing the mashing. Turned out a bit sweet, I'd say you only really need 1/2 that amount of maple syrup, but it was very tasty.

Easy to make and quite tasty. This is the way to have asparagus! Went over well at Christmas dinner.

Big Soft Ginger Cookies

Reviewed: Dec. 25, 2008
Super easy to make! I made these for my brother for a Christmas party he was going to. I used the advice of some other reviewers and used fresh OJ instead of water. I also threw in some orange zest. It really added a nice touch. I also drizzled them with some glaze, like I saw in some of the photos. They smelled delicious and must have went over well because none came back home!

Classic Gingerbread Cutouts

Reviewed: Dec. 11, 2008
Fabulous recipe! I used this to create my first homemade gingerbread house (usually just make one from a box!). I was absolutely amazed at how soft and supple the dough was (so easy to roll out it's ridiculous). Worked out great and the smell is divine. Great recipe! If I ever make another one of these, this is the recipe I'll use. I also love the rich, dark color of this gingerbread. Fantastic.

Lighter Banana Muffins

Reviewed: Dec. 3, 2008
Yum, these turn out great every time. Definitely didn't find them dry. Only used 1/3 of the sugar called for in the recipe, and it was still very sweet, probably don't even need any added sugar with all of the bananas. The banana taste was quite strong (which I love!). And no fat! Can't ask for more!

Honey Wheat Muffins

Reviewed: Nov. 19, 2008
These were pretty bland. Tasted pretty much like plain baked oatmeal. I added cinnamon and ginger but still they did not have much taste. Definitely couldn't taste the honey, so if I made these again I would double it. Lucky for me I love bland foods so I kinda like them, but you definitely couldn't serve them to anyone - they were pretty tasteless! The texture was good though and they smell delicious from the oven.

Winter Lentil Vegetable Soup

I made this in my slow cooker. Had to add a lot more spice or else it would have been pretty tasteless! Just alright the first day, but much tastier on the 2nd.

These are delicious! My sister made a batch using quinoa flakes instead of oats. She also added some apple pieces and raisins. Turned out delicious! Nice and sweet, with great texture :)

Fruity Acorn Squash

Reviewed: Nov. 2, 2008
Delicious! I only made one half and used an entire granny smith apple. I forgot the celery and added some salt, but pretty much kept the rest the same. I can't believe how quickly this comes together in the microwave! The tartness of the granny smith apple was a perfect compliment to the sweet raisins and the taste of the squash. Quick, easy, and delicious!

Salsa Rice

Reviewed: Oct. 29, 2008
This turned out really well. I didn't use the cheese (I'm a poor student, lol) but I just cooked up the salsa with the rice. Then I mixed it with some frozen chicken and veggies that I had stir fried and it turned out delicious! Yum. Adds great flavour, and just the right amount of kick. Great idea, I'll do this again.

Pumpkin Flax Quickbread

Reviewed: Oct. 25, 2008
Delicious! I've never made or had pumpkin bread before, but always wanted to try it. I was about to make another recipe when I realized that I was clear out of eggs! So I found this one and am I ever glad I did. Based on the reviews I didn't use any applesauce and just replaced it with more pumpkin. I added some raisins and instead of individual spices I put a lot of pumpkin pie spice. I baked it for 40 mins in an 9 x 9 square pan because I didn't have any loaf pans, and it came out awesome! So moist, and with great pumpkin flavor! Absolutely delicious, and great texture too. You would NEVER know it wasn't chock full of oil and is eggless. I am impressed, and I'll make this again!

Campbell's Jambalaya

Reviewed: Oct. 22, 2008
Good flavour and easy to prepare, but turned out REALLY mushy. Not how you would expect jambalaya to be. Was like glop, not rice. Wouldn't make it again. I think this is just something that shouldn't be made in a slow cooker.

Classic Thanksgiving Dressing With Parsley, Sage and Thyme

Reviewed: Oct. 15, 2008
Not a bad stuffing. Had to add a whole lot more liquid, I guess I'm used to a looser stuffing. Also added a ton more of the herbs, because I'm used to my stuffing very herby as well! Oh, and I also added some carrots. Overall, it was pretty good, not the greatest though. I'm used to stuffing with a lot more veggies and a lot more flavour. I only eat stuffing a couple times per year, so I guess to me any decadent stuffing needs bacon! Or something with that nice fatty flavour. A good healthier version though :)
