David's Yellow Cake

SOOO good! Box cakes are full of preservatives and junk you can't pronouce. Make a real cake from natural ingredients, it's so simple with a great recipe like this. I used 4 whole eggs as another had suggested instead of 8 egg yolks and it was perfect. DO NOT forget to beat that butter and sugar for several minutes at least until it turns that very pale yellow and becomes creamy and whipped. I don't know exactly what it does to the batter but it keeps the cake moist and makes a real difference in the outcome. I didn't frost it, just sprinkled powdered sugar on top and it was perfect for our (my daughters and me) little tea party!

Pumpkin Oatmeal

I use half milk and half water and old fashion oats and cook it on the stovetop. It takes a little longer but I prefer the chewiness of the bigger oats. I drizzle a big spoon of honey on top and don't forget the raisins! I am FULL for several hours after this healthy breakfast.

Lebanese Garlic Sauce

I tried to only make a third of the recipe but all I got was a runny, overly lemoned, nothing like the garlic sauce I wanted sauce. I ended up adding some sugar and oregano and using it for salad dressing since I didn't want to throw it in the trash and it was really good that way. Sorry, maybe I did something wrong since it seemed to work for so many others.

Scalloped Potatoes and Onions

Very good alternative recipe for potatoes. My only problem was my perception of a large potato is different from theirs b/c after slicing my potatoes, I could see that 2 cups of broth would not be enuff so I added another cup of broth and another tablespoon of flour. Glad I did, after my alteration, the were perfectly covered in just enuff sauce. I also added a couple cloves of minced garlic and topped them with a cup of cheddar cheese and they were the perfect side dish to my beautiful fillet of salmon, thanks!

Pita Pizza

I buy several bags of pita bread and keep them in the freezer. Just heat the oven to 400, spread the sauce on a frozen "crust" (no need to defrost) and sprinkle on cheese and toppings. Bake for 5 to 7 minutes and a very quick dinner or snack (even breakfast sometimes for my kids!) is served! Really great idea!

Cathy's Banana Bread

Very moist and good! I did reduce the sour cream to 1/2 cup (just to save on fat) and made the banana 1 1/2 cup to compensate. It is fabulous for breakfast with honey drizzled on top alongside your coffee!

Restaurant-Style Coleslaw I

Excellent recipe! My only alteration was to not use the milk, as the cabbage will wilt and release some liquid from the salt. I think it makes it less runny. But a great combo of remaining ingredients.

Turkey Brine

Tasted awesome and the house smelled so good while it was baking. I also added a ton of garlic and sliced onion to my brine. I just used all water and threw in several chicken bullion cubes to make up the broth part of the recipe. Soooo good and moist!

Frozen Caramel Latte

Delicious and just what I was craving! No espresso, so I used about 3 teaspoons instant coffee and increased milk to 1 cup. I drizzled Hershey's syrup on top. I think next time I will try it with a scoop of vanilla ice cream in the blender because it seperates quickly.

Creamy Hot Cocoa

Really delicious hot chocolate! I don't think I'll ever try another recipe. I also reduced the sugar to 1/2 cup and skipped the half and half, I just used 4 cups whole milk. I put a dollop of cool whip and used the fine side of a cheese grater to grate some milk chocolate on top. My kids were delighted!!

Baked Salmon II

Very good alternative recipe for salmon! I had a 2 lb. fillet and basically tripled everything except oil, salt and pepper. I only used 1/4 cup oil, salmon is an oily fish anyway and used 1 1/2 tsp. salt and 1/2 tsp. pepper plus about 1 big tablespoon chopped, fresh basil. Put it all in a big ziplock to marinade for an hour. Thank you for something different to do with my salmon!

Banana Pudding I

Wow! Really good homemade banana pudding! I picked this recipe because it was very close to my french pastry cream recipe, which is out of this world, and it tasted very similar except not as thick. Only change I did was to double the recipe so i would have a deep 9x13" dish and good thing I did. I probably added 1 1/2 to 2 teaspoons vanilla. I added until it was to my liking and after doubling everything else, I left the butter at 2 tablespoons (only to save on fat a little). Also, the author didn't mention if you bring it to the boil, but I figured since it's eggs, you have to. And that was when it got really thick anyway. I was a bit hesitant to put hot filling over the bananas, I thought they might turn black. So I whisked in 2 ice cubes to cool it a little more and poured it over the bananas and cookies very warm, not hot. But to my relief, the bananas did not turn one bit brown. I topped my dish with whipped cream. Thanks for a great recipe!

Leftover Chicken Croquettes

These were pretty good. This time I added only 2 big cloves of garlic. Next time I think I would add minced sweet red pepper and jalepeno to give it some zip. A bit tricky flipping them over in the pan. I used two spatulas to gently flip and slide them back into the oil. Otherwise they crack easily. Not a bad alternative though to chicken salad which is what I usually do with leftover chicken.

Apple Crisp II

How could over 1,000 people be wrong?? Really good but I think it can be better than written with the following changes. I had A LOT of golden delicious apples, about 15 cups. Because they weren't sour, I left the sugar one cup and doubled the cinnamon and flour, didn't put the water and also added 1/2 tsp. nutmeg, 1/4 tsp. cloves, juice of 1 lemon and 1 1/2 tsp. vanilla to apples. Piled them in a deep corningware dish, doubled the crust adding to it 2 tsp. cinnamon, another 1/2 tsp. nutmeg and 1/2 tsp. salt. But I think for me, doubling the crust was a little much, next time I think I will leave it as written, (only to make it less fat, but the crust was outstanding) Baked it for 1 hour 15 minutes, however next time 1 hour will be enuff. My house smelled HEAVENLY while it was cooking and everyone raved about the crisp served with vanilla ice cream. I will be making for many years to come!

Beef Stroganoff III

This was a really good recipe as written but with some tweaking you can make it excellent. I used a large chopped onion (in addition to the green onion), 1 tablespoon of minced garlic, 8 ounces sliced, fresh mushrooms that I added half way thru the cooking time and 1/2 cup fresh chopped parsley added just before serving for flavor and beauty. Omitted the wine cause I don't drink alcohol and just added water because by the time the meat was tender, it had thickened quite a bit and needed to be thinned a little. Also, I think slicing the meat into 1 inch slices makes them more bite size. I will be making this again for sure, thanks!

Authentic Chinese Egg Rolls (from a Chinese person)

These eggrolls are incredible! Because I don't eat pork, I used about 1/2 lb. chopped shrimp. I had sliced roast beef from the deli in my fridge, I sliced about 1/2 pound thin and put that in also along with 2 big garlic cloves. Lastly, I also used about 1 tablespoon of sweet soy sauce. The cool thing was when I first laid it the pan to cool it was full of water from the cabbage. I said "Oh I can drain that later", 2 hours later when I wanted to roll them, the water had be reabsorbed by the cabbage! Usually I drain that water and drain all the flavor along with it! Great idea! Thank you for your family recipe, I will pass it along to my children as well!

A Plus Fair Corn Dogs

Amazing taste! The best corn dog I've ever eaten! Didn't put the bacon grease, added 2 more tablespoons of buttermilk. I put 2 inches of oil in a deep skillet, used a skewer to coat the dry dogs (no flour) and then a fork to slip them off the skewer into the oil. Fried about 1 minute each side, until golden. Drained and cooled them a couple minutes then put the skewer back in for the kids to eat. I only had 1 pack of hot dogs so there was leftover batter. I used a spoon to put small spoonfuls into the oil, they were like little hushpuppies and they puffed up in a perfect round ball, we must have eaten a dozen of those! Thanks for this recipe!

Authentic Mexican Tortillas

As written, this recipe is only ok. 3/4 cup shortening is way too much. I have a rule of 1 tablespoon butter-flavored shortening for each cup of flour will give you a soft delicious tortilla. I have been making tortillas for years with a recipe I have that uses no baking powder or hot water. So I was intrigued by the comments to use boiling water and baking powder. So I used 5 cups flour, 2tsp. baking powder, 2 teaspoons salt, 1/3 cup shortening and about 1 1/2 to 2 cups boiling water. The boiling water made a big difference in the doughs consistency and the baking powder made my tortillas more like gyro bread, my family liked the difference, they noticed right away! I will continue to make them this way. So thanks for the new ideas. Lastly, no one mentioned stacking and covering them with a clean kitchen towel right after cooking them. It helps keep them warm and soft while preparing the rest.

French Bread Rolls to Die For

Great bread recipe! I used to make rolls with milk and eggs but my family devoured these and said they were better than the other. This is my new dinner roll recipe. They were so soft and fluffy inside! If you normally keep buttermilk in the house, like we do, you can gently rub the tops with a light coating of buttermilk just before putting them in the oven to make them bake up nice and brown on top.
