I recently had a baby girl and am now staying home with her. I am looking forward to having some time to do more experimenting and learning with my cooking.
My favorite things to cook
I do a lot of comfort food. For potlucks, I am only allowed to bring a few things. By the time the list gets to me, my name is already listed under some catagories depending on the type of potluck.
My favorite family cooking traditions
Our cooking traditions are done mostly around the holidays. We have to have our Christmas Breakfast Casserole on Christmas morning or it doesn't seem like Christmas. We also do a lot of recipe sharing amoung the women of my family.
My cooking triumphs
I had a birthday party for my daughter and made these really cute chicken bites using puff pastry and a recipe for hot chicken salad that I already have. They tasted great and looked really pretty too!
My cooking tragedies
For some reason, I have a really hard time making anything in the crockpot. A roast in the crockpot is usually dry, but bring it to the table from the oven and it is really good and juicy.

Good Old Fashioned Pancakes
This is my first time making pancakes from scratch. I made these as written for my first try. They were good and my daughter devoured them. I felt the batter was a touch thick for my tastes. Next time I make them, I will try to omit the salt, add a touch more sugar and a bit more milk. I may also try some of the other suggestions. I will be making these again though!!

Peach Cobbler VI
This was really good. I don't like when people rate a recipe and then say the changes they made, but I am going to do just that. My changes were very minor! When I tasted the batter, it seemed really sweet so I added a sprinkle of nutmeg. I also melted the real butter in the microwave directly in the 9x13. Then I poured the batter in the butter and swirled it together, not mix it. I added raspberries with the peaches and used a large can of peaches. Then sprinkled it with cinnamon. I brought it to a memorial day party with ice cream and the pan was scraped clean and the ice cream never even made it to the table. I also had requests for the recipe. Thanks!!

Chicken Puffs
My mom has been making these for years and now that my sister and I are married we also make it for our families. Our recipe calls for salt and pepper to taste, if not used, it is too bland. We also sprinkle crushed croutons on it altough I have used seasoned bread crumbs. For an appetizer party, I used puff pastry squares in mini muffin tins and then filled the shells and sprinkled bread crumbs on top and they were not only tasty bites, but pretty too.
