The Best Double Chocolate Chip Cookie

Great way to satisfy a chocolate craving! I substituted 3 cups of chopped walnuts for the chocolate chips, used butter instead of margarine, sucanat instead of sugar, and whole wheat rather than all-purpose flour. Even with the changes, they turned out beautifully. I will definitely make these again!

Restaurant-Style Prime Rib Roast

This roast tasted great, and I like the flour/spice rub. HOWEVER, something was wrong with the timing. I had 4lbs of meat, and roasted it for just over 90 minutes. Meat thermometer said 135 degrees. Let it rest for 30 minutes, as instructed. Unfortunately, when we tried to slice it for Easter dinner, it was so rare it was still bleeding. We had to finish it off in the crock pot and save it for the next day. According to my meat thermometer, you need to roast to an internal temp. of 160 degrees for medium. I wish I'd known that ahead of time!

Sausage and Spinach Soup

I used veggie broth instead of chicken, added chopped celery, and cooked everything in the crock pot (cut up the sausage at the end). Also added cooked pasta right before serving. I followed a previous reviewer's suggestion of baby spinach in the bowl instead of cooking it with the soup, and that was a FANTASTIC suggestion. Overall a very good soup, and we will make it again.

Giblet Gravy II

I substituted about a cup of milk for part of the stock, because I like a creamy gravy. Worked perfectly, and reminded me of the gravy my grandmother always used to make.

Applesauce Bread III

Easy to make in the bread machine, as stated. My husband and kids really enjoyed it. Quite dense, without the texture of a sweet bread - kind of in between a yeast bread and a sweet bread. Not my favorite, but I will make it again for my family since they liked it so much.

Butternut Squash Soup

As other reviewers have suggested, I only used 1 package of cream cheese. I found it interesting that the soup smelled savory, but actually tasted quite sweet (with a little spicy kick!) Not something I'd do frequently, especially since the kids didn't care for it, but my husband loved it!

Mango Coconut Sauce

This was interesting. I think that I would have loved it, except that maybe I just don't like mango? The texture is smooth and creamy, and it is wonderfully easy to make. We tried it over baked chicken, (didn't like that much) mixed with brown rice (better!) and over vanilla ice cream (hmm...yum?...hmmm...) If you know that you like mango, I think you'll definitely enjoy this. If you're not sure, try it.

Fennel Corn Muffin

This was ok but not something I'd repeat. Maybe I just don't like fennel that much! I followed the recipe as written except used regular milk instead of soy and 1/4 cup oil instead of 1/2.

Blackberry Cobbler II

This is a stellar recipe. Following some previous reviewer's suggestions, I made half again as much cobbler topping. I also reduced the sugar to just 1/2 cup in both cobbler and berry mixtures. I'm glad I did because it was quite sweet enough. I used frozen berries and had no trouble at all. I cooked the berry mixture in a saucepan, then transferred it to an 8x8 pan and covered with cobbler. Baked it for about 30 minutes. My whole family loved this and we will DEFINITELY make it again!

Slow Cooker Sausage with Sauce

We thought this was quite good, although not particularly original. I added a can of diced tomatoes with herbs and used only 5 sausages. I also pierced and boiled the sausages for a few minutes before putting them in the crock pot, in order to lower the fat content.

Sweet, Sticky and Spicy Chicken

This was great, but needs some adjusting. I added more meat and doubled the sauce to feed our family of four (with some leftovers). I only used 1 T. of hot sauce for the whole thing (1/4 of what the recipe called for) and it was still plenty spicy. I can't imagine trying to eat it with an entire 1/4 cup of hot sauce! I also cut the chicken into bite sized pieces (rather than strips) and dredged them in flour and salt before cooking them. It made the sauce turn out really well. If you cut the chicken up like I did, it will only take about 2-3 minutes to cook through.

Chocolate Zucchini Cake III

This is a very good cake, but I did make some changes to the recipe (thanks to previous comments!) I reduced the oil by half, and used 4 cups of shredded zucchini. I also used whole wheat flour, to make it healthier, and it worked just fine. I didn't have nuts or semi-sweet chocolate chips, so I used milk chocolate chips, and I think that was a mistake. They were too sweet - dark chocolate would have been much better. I also think that the sugar could probably be reduced - the cake turned out almost cloyingly sweet and I'm pretty sure that a sugar reduction would fix that. I'll try it next time. Overall, a good recipe that I will try again (with a few more changes!)

Brownies II

Very, very good! I made two changes to the recipe: I added 1/4 cup of milk, and about 3/4 cup of chocolate chips. I baked them for 25 minutes and they were perfect - moist and chewy in the middle with a slight crunch at the edges. Definitely something I'll do again!

Sausage Rice Pilaf

I followed the directions exactly, but after an hour of cooking, the rice was still hard. I cooked it for 2.5 hours, and still only some of the rice was soft, and the edges were burned. I will say that the flavors were wonderful, and I wish it had worked. I will try it again in the future, but I will cook the rice first and just heat everything together in the oven.

Artichokes in a Garlic and Olive Oil Sauce

It seems a little silly to review this recipe, since I changed so many things. Still, the result was very good, so I'll just detail the changes. I used 8 ounces of pasta, 2 T. of olive oil, and left the butter out entirely. 3 cloves of garlic, dried basil instead of fresh, and a 12 ounce package of frozen artichoke hearts instead of the canned ones. I added salt and pepper to taste, and at the last minute when I mixed everything together with the pasta, I added 4 ounces of cream cheese. I served it with parmesan cheese, and it was REALLY good. Do be sure to cook the artichokes until they're just starting to brown - the flavor is more intense that way.
