Spicy Mango Sweet Potato Chicken

I made the recipe as written, and while I found the sweet potatoes slightly overcooked, the overall result was great. It tastes just like stir-fry, and even my fruit and veggie hating husband ate it up.

Mexican Corn Bread

Yum! I made these as muffins, and they turned out well. They had a nice, savory flavor, even without the jalapeno (I didn't have one). They were a little bit dry, but that might be because I cooked them a little too long.

Korean Marinade

Yum! I added about 1 Tbsp. of honey and a dash of wine to this, and marinated a pork loin in this. It turned out very well.

Herbed Twice-Baked Potatoes

These were very good. The skins on my potatoes ended up being too thin to withstand the process, so I baked the potato "guts" in a few small ramekins, instead. Despite my blundering, they were creamy and rich tasting. Not my favorite way to cook potato, and perhaps too much work for the reward, but very good and something I'll make again.

Chicken Souiza Cornbread Bake

This turned out pretty well. I made the recipe as written, except I left out the mushrooms. I think next time I will cut down on the amount of sourcream as others have suggested. I also found that there was way too much cheese, even though I didn't even use the whole bag. It just made the dish too greasy in my opinion - odd, since I am usually such a cheese lover. It was nice comfort food, though, and with a couple of tweaks, I'm certainly going to make this one again.

Simple Whole Roasted Chicken

This chicken smelled wonderful, looked beautiful and tasted very nice - extremely juicy. The only change I made was to stuff part of an orange in to the cavity along with the garlic.

Creamy Au Gratin Potatoes

Absolutely fantastic dish, and also extremely easy. I didn't have onions to use, and I used a "Mexican" blend of cheeses rather than straight cheddar but it still turned out really well. I'll make this one again for sure!

Marinade for Steak I

Fantastic marinade. I made it exactly as is, except I used a mixture of red wine and white vinegar in place of the red wine vinegar, since I didn't have any. Even so, the steaks (a fairly cheap cut) came out tender and had a very nice tang to them, but weren't overly seasoned. I'll definitely use this one again.

Garlic-Lemon Double Stuffed Chicken

It was so rich, I was surprised that I didn't have a massive coronary directly after eating it. If I had though, at least I would have died happy, because this was a wonderful, moist, creamy and flavorful chicken dish.

Chicken Enchiladas V

I doubled the sauce as others had suggested, using 1 can of cream of chicken and 1 of queso cheese. I also used ground turkey because I didn't have chicken on hand, but it still turned out wonderfully. Definitely a keeper!

This was nice and quick, the chicken turned out very moist and had a nice flavor. Next time I think I'll add some garlic and onions to spice it up a little because it was slightly bland for my taste. I'll definitely make it again, though.

Pretty good chicken. I followed the recipe exactly, and they were nice and oist, and the breading had a nice flavor. However, they weren't amazing either; just regular chicken. I would make it again, though.

Honey Roasted Red Potatoes

These had a nice, uniquely sweet flavor that I really enjoyed. They aren't my favorite way to make potatoes, and my husband wasn't a big fan, but I think I would make them again since they were so easy and turned out nicely.

Best Baked Chicken

This was lovely! I left out the celery salt, but stuck to the recipe other than that. It was moist and had a fantastic flavor. I'll definitely make it again.
