Butternut Squash Casserole
Was really good.. but i did alter the original recipe. I wanted to make it as a side dish and instinctively knew that 1 cup of sugar would make it more like a dessert. That being said I used 1/4 cup of sugar (i used sugar in the raw) and only 1 cup of milk (i used unsweetened vanilla almond milk). This cut back on calories and fat. I did not have margarine so i did use butter and I used basic graham crackers 1/4 cup of butter and 1/2 cup of brown sugar for the topping. The end result was more like a custard and worked well as a side dish. It was still sweet, just not overpowering sweet. My kids GOBBLED IT UP!! A testimony to the squash.

Big Soft Ginger Cookies
Fabulous.. Be warned.. if you eat them while they are still warm.. you will get a tummy ache from eating too many. KILLER good warm out of the oven. Almost too good. A massive diet killer and worth every bite!

Oven-Baked Sesame Chicken
So... needed a direction for oven baked chicken (breasts on the bone) and this one was perfect. I didn't have the buttermilk in my fridge (wish i did) so i skipped that step and had to bake for closer to 45 minutes due to not using boneless breasts. The only thing I'd do different is leave it in the oven at 400 for maybe an extra 5 minutes to get it slightly brown on top, then turn down the oven to 350. It was VERY tasty and don't forget to drizzle the extra butter on top.. that part makes it even more yummy.
