Shrimp, Leek and Spinach Risotto
This was SO good. Definitely needed an extra cup of liquid when making the risotto...I just used plain water.

Tortellini Soup
This was so easy and delicious. First I sauteed the garlic in a bit of EVOO. Then I used beef stock, which I heated to simmer and added a bag of baby spinach and the tomatoes. I cooked the tortellini according to package and threw those in at the end. Served with a big salad and whole wheat rolls...such a quick, easy, and healthy dinner.
