Amy's Barbecue Chicken Salad
Great salad - but made the following changes per other reviews and my own tastes: Seasoned chicken with fajita seasoning prior to grilling. Added sliced red and yellow peppers. Used 3 parts Ranch dressing to one part BBQ sauce. I fried corn tortilla strips in oil and used them as topper instead of the fried onions.

Almond-Crusted Tilapia
Very good. Probably because of all the butter and fattening ingredients. But its definately a keeper. Be careful about adding too much salt. I salted mine while it was cooking and it tended to be just a little too salty.

Mexican Style Shredded Pork
Made this recipe for my Cinco de Mayo party. It was a huge hit with everyone,even my siste-in-law who is Mexican - she suggested that I add a little cumin after I shredded the pork and put it back in the crock pot, which I did (approx. 1 1/2 tsp) It added more taste. This recipe is extremely easy and delicous. A keeper for sure.
