Black Bean and Couscous Salad
Made last night to take to friends for dinner and it was a huge hit and will become my new potluck staple! I made changes based on reviews (1 can of beans, 4 grn onions, 1 tsp cumin and double vinegar). And while it was good, next time I will go with 3-4 TBL of lime, 4 TBL oil, 1 TBL of vinegar, 1 TBL cumin and will throw in some cayenne. I also cooked fresh corn on the cob and sliced it off instead of frozen, but only when you can still get good fresh corn. Oh, and I definitely used the whole wheat couscous!

Greek Pasta Salad with Shrimp, Tomatoes, Zucchini, Peppers, and Feta
This was really good. I only used 1/2 pound of pasta (bowtie) and think if I used a pound I would definitely double everything unless you like it really heavy on the pasta. I didn't bother to cut the shrimp, seemed like a waste of time to me. If you want more shrimp per bite, just use a smaller variety. I might try some fresh basil next time. I served this for a main course for dinner but can definitely see bringing it to summer potlucks. Awesome.

Dee's Roast Pork for Tacos
This had an off flavor to me, but that could have been from following other reviewers advice. I normally read a bunch of reviews before making a recipe to adjust to our tastes. I did it in the crockpot and it was extremely tender but the spices didn't seem to work together. If I were to try again I would not use any chili powder (I cut back per some advice), and use more taco seasoning and more oregano and I think add lime during cooking.
