I used Pam instead of butter and added garlic powder and parm cheese. Thanks for a new way to make zucchini!

I wasn't crazy about this recipe. I added onions and diced tomatos to the ground beef, after draining it. I still found it to be a little bland. I should have listened to other reviews about putting sour cream on the side because mine looked like it curdled. It was easy enough and my husband enjoyed it but not worth all the calories.

My husband loved this soup! I didn't have onion powder so I used finely chopped onion and I broiled the meatballs before adding to the soup. I also substituted chopped spinach for escarole. This will be added to our usual rotation! Thanks for an easy and delicious recipe!
