About this Cook
I work as a Newborn ICU nurse in Albuquerque. After 13-14 hour day, I love to come home to a home cooked meal made by my husband who will grill anything! We both love to make ethnic foods. I enjoy baking. We eat a lot of once a month cooking meals- it works great with our schedule, and it saves a lot of money and even more time!
My favorite things to cook
I love to make "comfort" foods- things that remind me of what I ate growing up in Minnesota. My friends favorite things for me to make are the King cakes that I make and share. (NICU Nurses really like the baby part...) My dog loves home made doggy treats-- I'll be teaching a class on that this fall at church!

Swedish food for Christmas, and wild rice stuffing with our Thanksgiving turkey...

My cooking tragedies
My first layer cake ever at age 10. I learned the hard way why it is important to let your cake cool before frosting it. (The dog ate the entire top layer after it slid off and onto the floor...)

Anniversary Chicken I
I added some baby portabella mushrooms to this chicken, but followed everything else exactly. It was great! It would be easy to do for a crowd.

Cali's Sinful Creme Brulee
This was wonderful! I was making for two, so cut the eggs to two, and used 3/4 cup heavy cream and 1/4 skim milk to ease the guilt pangs. I added the milk to the chocolate like some others have suggested. We put cappuccino flavored sugar on top. It was amazing -smooth creamy and the flavors worked so well together. Only change I would make is to not put the chocolate up the sides of the dish. It got singed by the torch.

Momma Lamb's Famous Fruit Salad
Followed the advice of others and used cooked pudding made with the drained pineapple juice and then heavy cream to make two cups of liquid. I used canned pineapple, mandarin oranges, maraschino cherries, fresh grapes, bananas, and blueberries. For good measure, I also added some mini marshmallows. The pudding sauce was great.
