I used 3 squares of semi sweet chocolate and 1 square of unsweetened chocolate and the cakes were fantastic.

This is an easy and impressive side dish. I used fresh green beans and Mrs. Dash lemon pepper. This turned out fantastic!

To Die For Blueberry Muffins

These muffins are very moist and fluffy. I recommend using brown sugar instead of white sugar for the topping. The perfect thing to make for company!

Buster Bar Ice Cream Dessert

Reviewed: Jun. 23, 2008
This recipe was easy to make and it was the perfect desert for a hot day. I served it very frozen and found that the crust was a bit too hard to cut so the next time I would cut down on the amount of cookies to make the crust thinner. I would also recommend making sure that the ice cream is very frozen when assembling this cake - I let mine soften to make slicing it easier but it turned out a tad too melted. Also, make sure that the fudge topping layer is very chilled or else it will melt your ice cream when you spread it. I hope those tips help - this recipe is a winner.

Mexican Chicken Soup

Reviewed: Nov. 14, 2006
Wow, what a great way to use up leftover chicken meat the night after roasting a chicken. Although I loved this recipe, I think it could benefit from double the taco seasoning and 1/2 cup of frozen corn.

Almond-Crusted Halibut Crystal Symphony

This dish was not worth all the work for me. The sauce was very time consuming to prepare and it minimally added to the overall dish. Sorry.

Chicken Enchiladas II

Reviewed: May 25, 2006
I found this dish to be pretty flavorless, not spicy as was expected. If I were to make this again, I would use enchilada sauce instead of mushroom soup.

Focaccia Bread

An easy-to-make crowd pleaser! I served this as an appetizer with olive oil and balsamic vinegar for dipping. I also used coarsely chopped fresh basil in addition to the recipe's dried spices. The dough keeps well for a few days so it's worth making a double batch and baking it as needed.

Creamy Pesto Shrimp

This turned out well for me. I used freshly grated parmesan, not the powdered kind, and my sauce turned out quite creamy. I would make this again for a special occasion!

Thai Noodle Salad

Reviewed: Apr. 29, 2006
I agree, this one's a keeper. I added 1/8 tsp of Splenda to the dressing and a bit more crushed red pepper. I also added thin slices of red peppper and snow peas to the salad. I also chose Peking Noodles (they don't need to be boiled) over Udon noodles. With these modifications, this salad was crisp 3 days later. I mean it, it's a keeper!

Chicken with Asparagus and Roasted Red Peppers

Easy, tasty, and healthy! We roasted our own red peppers to avoid the fat from the oil in pre-made roasted red pepper jars. We also used provalone cheese instead of mozzarella for more flavour. Highly recommended!

Sweet Spicy Wings

Reviewed: Apr. 22, 2006
An excellent recipe! We used just drummettes and marinated them overnight. They do tend to char a bit so be very careful when you grill them. Baking them and basting them with the extra sauce is a must! I agree with the review stating that these wings are the perfect level of spiciness to satisfy everyone! We plan to add more hot sauce next time.

Black Bean And Corn Salad II

Reviewed: Apr. 12, 2006
This is an excellent salad that keeps well for a couple days. You can add extra zip by finely chopping a jalapeno pepper and adding to the dressing. I was recently add a party where a dip was served with the same ingredients, except the dressing was mayo and cumin. Everyone loved that one too. Cheers!

Garlic Prime Rib

Reviewed: Apr. 10, 2006
I'm a beginner cook and have always been scared to attempt cooking prime rib. However, this recipe made it so easy. The big secret is removing it and tenting it in foil 10 minutes prior to reaching the desired temperature. I made sure to made au jus to accompany it in case it was too dry, but it wasn't necessary. Highly recommended!

Strawberry Trifle

This one is a keeper. And you can't tell if you use a light pudding mix and ultra low fat topping. I had a hard time getting in very many layers, so next time I will serve this in individual dessert cups for a nicer presentation.

I agree with the rave reviews! Any kind of frozen fruit works (including pears, mandarin oranges, peaches, blueberries, or raspberries). If you use a flavored protein powder, you can omit the honey!
