Buffalo Chicken Wraps

Very easy and tasty midweek dinner. I will definitely be making these again. I left out the celery because I didn't have it. Used Louisiana Hot Sauce. The perfect buffalo sauce.

Best Ever Corn Muffins

I will definitely make these again. I served these with chili so I didn't want them to be all that sweet. I reduced the sugar from 9T to only 3T and I omitted the vanilla. I used gluten free baking mix. These were fantastic gluten free, slightly sweet corn bread muffins. I used muffin cups because everyone said they stick. They even stuck to the paper a little. I'd definitely use the muffin cups!!!

Sour Cream Pork Chops

These were great! I was cooking for 6 people and by doing the pork in the slow cooker, I had plenty of time to work on mashed potatoes and slow cooked green beans. The only thing I did differently is that I used gluten free flower on the pork and corn starch to thicken the sauce. I used chicken stock instead of bouillon cubes and I strained the broth before adding the sour cream. When I tasted the sauce, I wasn't sure about it, however, it complimented the pork and mashed potatoes very well. The entire group loved the pork! So tender. I will definitely make this again.

Orange Vinaigrette

I enjoyed this very much and will definitely make it again. I really like strong and very flavorable foods so next time I'll add a 1/2 tsp of sesame oil and some fresh minced garlic. I think it would then be spectacular! Served it over a spinach salad with mandarins, wonton chips, carrots and feta cheese.

Cornbread Muffins I

We loved these! They are pretty sweet but because of that, they paired nicely with our spicy chili tonight. We just had to go wheat free in our household, beginning this week, so I experimented with the Pamela's Wheat and Gluten Free Pancake and Baking Mix. Substituted for the flour. NO ONE would ever know they were wheat free!

Diego's Special Beef Stew

I used a 2.5 lb roast instead of stew meat. It made plenty and I'll freeze the leftovers and make a beef pot pie in a few weeks. I thought it was pretty good; I added too much water though because it was pretty runny. The meat was wonderful and I shredded it with a fork before serving. I think a few more veggies would be nice. Next time I'll add a little more spice. Definitely missing something but I'll make it again.

Shiitake Angel Hair Pasta

Wow, this was great! I used Cremini mushrooms, since I didn't want to spend the money on Shiitake's. I also added a pound of steamed snow crab to the dish (because it was on sale). I used double the wine and broth and served it over egg noodles instead of angel hair. Used an entire 16 oz carton of whipping cream and a lot more parmesan added right to the sauce. Rich and fantastic! As good as any restaurant.

KELLOGG'S® RICE KRISPIES TREATS® Birthday Fun Cups

These things were sticky and hard to make. They did work out in the end but were soggy by the second day. I won't make them again. They looked really cute though! I put a dab of chocolate icing in the center with sprinkles (instead of pudding). The kids enjoyed them though (that's what really mattered).

This was great! I used pork loin (because that is what I had). Used a lot more chicken broth than it called for (just didn't seem like enough). Lastly, we served it with sour cream and a little cheese. Would have been nice if I had tortilla chips too. Thanks for the recipe!

Grandmas Bogie's Parmesan Chicken

I thought it was a lot of work and just okay. In my opinion, it needed a dipping sauce so I made some honey mustard. I probably won't make this again. I'm hoping my very young kids will eat the leftovers tonight since it's basically a big chicken nugget.

Quick Quiche

This was a little more bland than I expected it to be. However, I used Colby Jack rather than swiss (because that's what I had). Next time, I'll use the swiss. I'll definitely make it again, however. We ate it for dinner with a spinach salad.

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

We really enjoyed this dish. I changed it up a little but the same concept. Rubbed the pork loin steaks with olive oil and seasoned them well with garlic powder, onion powder, salt and pepper. Once browned, I added the sliced onion and cooked about 3 minutes. Added garlic and cooked another 30 seconds. Then added a can of chopped diced tomatoes to deglaze the pan. Covered and cooked over low heat for 30 minutes. Topped steaks with fresh basil, feta and a few sliced kalamata olives. The meat was so tender! I decided to cook it this way because I find pork loin to be very dry. Fantastic dish! Served with asparagus and saffron rice. My husband. who isn't wild about pork loin (dry), really loved it.

Baked Asparagus with Balsamic Butter Sauce

This was quite good and SO simple! The asparagus was still a little crunchy for me. I'll cook it about 5 minutes more next time. I browned the butter a little to give it that nutty flavor (before adding the balsamic and soy sauce). Yum!

Pineapple Macadamia Chicken

My husband doesn't care for chicken unless it has a lot of flavor. I didn't think he would care for this but he liked it and ate it all. I thought it was good and worth making again but I didn't think it was out of this world. I used pecans because I had tons of them.

Super-Simple, Super-Spicy Mongolian Beef

I added matchstick carrots in with the onions. Definitely double the sauce. I think it would be very dry w/o doubling. I used one serving of sauce for the marinade and the other serving I poured over the meat immediately after I turned off the burner. I found this to be too salty using Kikoman brand soy sauce. Maybe the light would be better. ...and I'm a salt lover!! Still too salty for me. This is good but I'd tweek it a bit next time. Less soy sauce (or light), a tad bit more sugar and a couple of teaspoons of freshly minced ginger would be good. It's not my favorite Mongolian Beef recipe but I loved that it was quick and easy.

Dee's Roast Pork for Tacos

I did this in the crock pot (high for 3 hours and low for 2). Used the green chilies and about 1/2 cup of water to help it cook. Shredded it up afterwards. I didn't use a taco seasoning packet but made my own taco seasoning instead (TONS of freshly ground cumin, a little chili powder and a lot of garlic powder. It was great! We served it in corn tortillas with a little sour cream, avocado, cilantro and salsa! Great healthy meal.

Wild Rice Micro Chicken

This was too bland for our taste but certainly edible. I would probably actually give it only 3 stars but I didn't want to mess up the rating (since I think many people might like this). Just a little boring for us. Not a bad dish but I doubt if I'll make it again. I think it would have been a lot better with sautéed onions mixed into it and twice the sauce. It wasn't dry but I think making it saucier would be even better. I also topped it with French fried onions. That was a nice touch. I used a rotisserie chicken. The nice thing is that I made two 8x8 dishes and froze one. Although, I hope the next one won't be really dry.

Minty Orzo Lentil and Feta Salad

Wow, pretty great. The recipe sounded pretty boring but I tried it because of the great reviews. We loved it. I left out the dill because I didn't want to spend the money on it. I think it's the raw garlic that makes it so wonderful. I think the juice of a lemon or lime would make it even better! I will definitely make this again. Great with a sandwich.

Best Toffee Ever - Super Easy

Excellent! Next time, I'll use two cookie sheets instead of one. I liked the thinner ends of the toffee better than the thick center. This is wonderful and tastes just like the stuff you buy at the candy store for $18/lb! You must buy a candy thermometer ($2.50 at Wal-mart). On top of using the thermometer, I also used the cold water test. It was perfect!
