Slow Cooker Chicken Taco Soup
Loved this recipe! I made it 5 days ago and I had the last bowl for lunch today. I have to say it got better every day! I did hae to make a few changes as I didn't have exactly what the recipe called for. I had plain old diced tomatoes, no chili beans but Chili starter in a can with chili beans. I used frozen corn and very little onion. I started out using a whole can of Bud Lite, thinking since it's a light beer it wouldn't overpower the soup. For my taste it still was too strong so I added a whole 14.5 oz can of Chicken broth on top of the beer. It really helped tone down the taste of the beer. I was fraid the soup would be too think but it wasn't at all. THe soup is definitely a keeper, I plan to make it all winter long!!! Thanks for sharing!
