OMG these are fantastic! Fresh out of the oven they are melt-in-your-mouth delicious. I would agree it is better to under cook than to overcook these. A definite keeper. Thanks!

Great recipe! I marinated the salmon for about 20 minutes before baking. It only took about 10 minutes to cook, any longer and it would have been dry. B/f loved it so much he went back for seconds and thirds : ) Thanks for a great recipe!

Delicious and easy to make. I poked holes in the chicken with a fork and then allowed it to marinate in the pesto a few hours. Added more pesto to the top of the chicken immediately before baking and baked covered about 20 minutes. I used a 3 cheese Itallian blend and put fresh basil under the tomatoes and more cheese on top of the tomatoes, then baked 5 more minutes. This recipe is boyfriend approved :)
