Baked Pesto Chicken
Delicious and easy to make. I poked holes in the chicken with a fork and then allowed it to marinate in the pesto a few hours. Added more pesto to the top of the chicken immediately before baking and baked covered about 20 minutes. I used a 3 cheese Itallian blend and put fresh basil under the tomatoes and more cheese on top of the tomatoes, then baked 5 more minutes. This recipe is boyfriend approved :)
