Corn Noodle Casserole

Reviewed: May 19, 2009
This was pretty tasty. I made it pretty much exactly as described here and I put some crushed butter crackers on top. Worth trying and experimenting with to see what your family likes best.

Pumpkin Bread VI

Reviewed: Oct. 28, 2008
This bread is easy because it has a simple list of ingredients. I used pumpkin pie spice in place of the allspice and nutmeg. I'll probably use more next time. I have to admit I found the orange flavor a touch off-putting but it was something new to try. However, next time I think I'll substitute applesauce instead. It really bothers me that no oven temp was listed, I set mine at about 340 and I had to bake it for about 65 minutes, came out great though!

Snickerdoodles V

Reviewed: Apr. 13, 2008
I used a 3/4 c whole wheat flour, and 1/2 splenda in this recipe in place of some of the ap flour/sugar. They tasted pretty good and my Mom liked them, which is why I made them. However 1 1/2 days later and they are pretty darn stale. Kinda did not have *too* much flavor. Oh well.....

Banana Banana Bread

Reviewed: Apr. 9, 2008
I didn't measure the bananas at all because I was just using the 3 that I discovered lurking in my fruit bowl!! Added some chopped walnuts and 1/4 cup applesauce. I did this because I did not have any AP flour and just had whole wheat. I added that to keep the moistness and this bread is WONDERFUL!

Apple Oatmeal Bar Cookies

Reviewed: Mar. 18, 2008
These were ok. Kinda bland and I actually added some cinnamon sugar on top. I did make this without the nuts. I am looking for something similar to those new 'Oatmeal-to-go' bars, so this didn't really fit the bill for that.

Whole Wheat Snickerdoodles I

Reviewed: Mar. 15, 2008
These kinda turned out to be 'fiber cookies'. Maybe my cream of tartar was too old or something?? I might try them again with half WW, half AP.

Date Bars I

Reviewed: Feb. 20, 2008
This recipe seems to have a lot of issues going on as I noticed by the reviews. But I just halved the recipe to use up some dates and it went fairly well. Next time I would use more dates in order to make more filling, and probably would of followed more of the review suggestions in order to made the topping/crust more cohesive. All-in-all it was yummy, though crumbly as other people have noticed.

Miss Betty's Super Quick Dinner Rolls

Reviewed: Feb. 8, 2008
This recipe was super quick and pretty awesome. I made these with whole wheat flour for the additional fiber and other nutritional benefits. I added more milk due to this and they turned out really tasty, my husband wanted another, and he is very picky. They took about 20 minutes and I will probably add a little more mayo next time, just due to the whole wheat flour. Thanks for any easy recipe! Oh, and I did use the 1 1/2 tsp. baking powder and 1/2 tsp. salt sub.

Winter Chicken Bake

Reviewed: Feb. 5, 2008
Next time I make this recipe I will use more BBQ sauce (use Head Country if you can, it's the best!) and I will choose a smaller sweet potato than the one I did. I ended up needing to cook this for about 55-65 minutes but that was because my chicken was not as thawed as I thought. Also..... I left the apple peels and potato peels on in order for the fiber, and I enjoyed this dish just the same, I forgot I had done that in fact... So leave the peels on :D Overall, VERY tasty, very unique recipe, that is what I think.

Peanut Butter and Apple Sandwich

Reviewed: Dec. 4, 2006
I call this the "apple pie" sandwich! I don't shred the apple but just cut really thin slices and stack as many as i can on the bread. I PB both sides so it will stick together and I add a little cinnamon!! YUMMMMMMM!!!!!

Macadamia Coconut Icebox Cookies

Reviewed: Apr. 8, 2006
Maybe it was the fact I scaled this recipe down some, but the cookies really didn't stay together, very crumbly. They have a good taste because I like what's in them but my husband says they are too 'fibery'

Best Lasagna

Reviewed: Mar. 29, 2006
This recipe was ok. I have NEVER made lasagna and the directions were easy to follow. I did not have the italian seasoning or fresh basil, but i did use dried basil. My boyfriend and I thought that it should have more sauce in it as it was a tad dry. The color on the inside was kind of gross as the little amount of sauce made a raw meat looking filling. The zucchini was a nice touch though, I love zucchini :)

Tasty Tuna Pasta

I just kinda used this recipe as inspiration and made a hefty portion for myself for dinner. i used all the ingredients except oregano and basil (didn't have any) It turned out really good!! I didn't measure anything so I wouldn't know about the proportions of the recipe, I just used the ingredients it has listed, minus the last 2.... yummy yummy!!

Easy Batter Fruit Cobbler

Reviewed: Jul. 26, 2005
I made this with peaches, and I thought it was great!! I just served it by itself instead of with ice cream because there is enough sugar in this alone. I will probably make it again sometime with these alterations... 1/2 cup more peaches, only 3 Tbs butter, and 1/2 cup sugar with an extra Tbs on top. It turned out a little creamy underneath with a nice golden crust on top. I also cooked mine about 65-70 mins vs. the 50-60.

Broccoli With Lemon Almond Butter

Reviewed: Jul. 26, 2005
A good way to make steamed broccoli a little more than just steamed broccoli but I definitely agree with other reviewers in that the butter-lemon ratio was off. This was more like Broccoli with buttery lemon sauce.. I did add the almonds but come to think of it... didn't really notice them at all. It was a tad sour, but I did like it when it just lightly covered the broccoli, the rest of my family ate it, but didn't enjoy it.
