Roasted Root Vegetables With Apple Juice
I really liked this dish. It is a sweeter variation from traditional root bake (usually just garlic, herbs & oil oil), but a nice change. I added beets and the juice mixed with the apple cider to make a nice sauce. Watch the cider/wine reduction it may take longer than 30mins, but make sure you are down to 3/4 cup before using. A great dish and I have already passed along the recipe! Thank you!

Vegetarian Shepherd's Pie II
This was an excellent recipe, thank you! The walnuts, lentils and barley created a very delicious hearty flavor. I added some frozen peas and would suggest an additional carrot. I didn't have the yeast spread so I used a packet of dried yeast (prepared as directed) and seemed to work fine. This is a great dish to customize with your own favorite veggies.

The Best Chicken Salad Ever
I love this basic recipe. Do yourself a favor and make the coleslaw dressing...http://salad.allrecipes.com/AZ/ClSlwDrssing.asp, I used Vegenaise (just like mayonnaise) in place of the creamy dressing, added a 1/2 cup of cashews. I fifn't use a food processor because I think it breaks it down too much, just diced into small pieces. This can also be made into a delicious sandwich by adding bacon strips, sliced avocado and provolone or swiss cheese. We couldn't stop eating it!
