Spinach Mushroom Quiche

Wow...what a nice surprise this one turned out to be! I was searching for something to do with my large container of spinach and happened to search spinach and mushrooms and stumbled across this one. It's not often that I have a pkg of crescent rolls in the fridge, but I did tonight (reduced fat ones too!!). So, I actually used 5% cream, light cheddar (no mont jack) & 2 eggs with 4 egg whites. Didn't have a pkg of herb and lemon soup mix, so improvised with some dry herb/dip mixes that I have (used a combo of cheese/jalapeno with bruschetta herbs). This turned out SO WELL! Hubby was very pleased and even claimed he would be eating some leftover for breakfast (wow, shocking)!! Thanks for the post!

Rib Eye Steaks with a Soy and Ginger Marinade

Well, I didn't have any rib eye steaks, but did have a nice piece of top sirloin (Costco) and have been eyeing this one for some time, so decided to try! I did cut the recipe in half for our one piece of steak (maybe 12oz or so). Marinaded for about 8 hours and then as many others have done, boiled the leftover marinade to use on top of the steak and our rice. So yummy...will make again!

Cranberry Orange Cookies

A truly phenomenal cookie (and so pretty too)! Added these to my Christmas baking this year and am really glad I did (hubby raved about them)! Thought it would be nice to bake something in without chocolate! The combination of orange and cranberry is classic and I added 1/2 tsp of almond extract which goes so nicely with these flavours. Also used about 1 1/2 tsps of orange zest. Left out the walnuts and used fresh cranberries. The icing is a must....mmmmm! Will make these again hands down!

Tommy's Ham Casserole

Nice recipe to use up some leftover ham! Made this one for my boys, used wagon wheel pasta and realized I was out of cream of mushroom, so cream of broc had to substitute (would have been better with the mushroom as the broccoli is a bit strong!). Used panko bread crumbs on the top as they are my standby fave and preference! Great quick meal!

Colorful Black Bean Salad

MMMM, yummy! Have made a couple salads similar to this one in the past...loved it! Only had half a can of black beans, so cut the recipe down to 2 servings. Great flavour, especially love that the lemon juice ratio is higher than the oil as I always tend to change the recipes that aren't! Excellent side with our bone in chicken!

Quinoa with Mushrooms

This was quite good. I have cooked with quinoa before, but came across some red and decided to try it out. I only had 1/2 cup, so recipe was split as such. Sauteed my garlic and mushrooms with a bit of spray and left out the parm at the end only to save on calories...although that salty/nutty flavour would certainly have added much more flavour - how can you go wrong with adding fresh parmesan?!!! Will definitely make again!

Maria's Stuffed Chicken Breasts

MMMMM...really good! I was only stuffing two chickent breasts, and despite reviews that there was a ton of stuffing, I kept the other ingredients as they were indicated. I had cooked some jumbo pasta shells that I decided to use some of the excess filling for to make for my boys (just cooked them some chicken and added to their stuffing). The only other thing I changed was to use fresh spinach as I didn't have any frozen. Didn't measure, just chopped and added to my ricotta mixture with a few dashes of nutmeg (which I usually add to ricotta mixture). Also added fresh grated parm in the last 10 minutes of cooking instead of more mozz! Really yummy, perfect with a simple side of steamed veggies or even just a salad!

Crispy Oven-Fried Fish Fillets

Very good...great alternative to 'frying' and so much healthier! I used panko crumbs and seasoned my flour with some Louisiana style seasoning...starting by dipping in the flour, then milk and then panko. Used both tilapia and ocean perch, we really enjoyed this and will make again!

Sauteed Mushrooms in Garlic

MMMMM....we LOVE mushrooms! These were very yummy. I used baby bellas, cut the recipe in half for just the 2 of us. Did not add the garlic until closer to the end as you don't want it burnt and used an oak aged Malbec wine. These were fantastic with our steaks!

Premium Pizza Crust

Excellent! Love making homemade pizza dough for our normal Friday night pizza...so much better than store bought! I used the sponge method and found (like others) that I needed to add at least 1/2 to 1 cup more flour to get the right consistency. Very nice pizza crust...give it a try, yummy!

Exquisite Pizza Sauce

Excellent sauce!! I did leave out the anchovy paste as it's not something I have ever used, so did not have! I also realized I had no marjoram...don't recall ever having used it either! Regardless, this sauce has a great spicy kick and it was very yummy on our pizza! Not much better than homemade sauce and dough for your weekly pizza!

Spanish Chicken

Very yummy, one dish meal! I used bone in skinless chicken, just browned a bit longer and I also used some brown and wild rice mix (cooked for about 12 mins first). I was out of green peppers, so used some red and per other reviews, threw some black beans in as well. Left the picante sauce off of the top and the olives too (hubby doesn't care for olives). Turned out great, with lots of flavour, yummy!

Spiced Pumpkin Seeds

Yummy! Unfortunately, only had one cup of pumpkin seeds. Opted to use olive oil instead of margarine and granulated garlic instead of garlic salt. I also used a chili garlic sea salt as opposed to regular salt, will make again, thanks!

Spicy Rapid Roast Chicken

SO YUMMY!!! This was a super easy recipe to throw together...I think the hardest part was changing the oven temp, LOL!! Great spicy kick to it and the chicken came out nice and moist...perfectly cooked in 60 mins! I did remove all of the skin and after reading other reviews, I took it out at 165 and left covered for 5-10 minutes, yummy! Will definitely make again!

Fettuccini with Mushroom, Ham and Rose Sauce

MMMM, so yummy!! I was looking for a recipe to use up a bunch of ham from Thanksgiving and this one fit the bill! I did cut this recipe in half & added some diced yellow peppers along with the mushrooms, sauteed in a bit of canola oil. To cut back on calories and fat, used about 1/4 cup of 5% half and half and 1/2 cup of 1% milk. Did use a bit more pasta sauce than called for and didn't have dried parsley, so omitted (basil and oregano were great)! Used the amnt of red pepper flakes called for and didn't find it too spicy at all...nice flavour, would probably use more next time. Served over fresh linguine, a repeat recipe!!

Spicy Honey Mustard Pork Roast

This was yummy, my roast turned out nice and moist with good flavour! Like many others, I added some water to the pan and reduced the pepper by at least half, 2 tbsps of pepper seemed like way too much!

Baked Halibut Steaks

MMMMM, good! My only complaint is that I didn't have enough fresh basil...the tiny bit I had was great, but using the correct amount would have been much better! Regardless, nice and light and flavourful, great dish for halibut.

Turkey Spaghetti Pie

Very good! I doubled this recipe, using 2 separate pie plates as I did one batch for the kids and one batch for us. I used fresh garlic for both and to ours I added some mushrooms, a jalapeno, some chipotle chili powder and taco seasoning. I also swapped the sour cream for ricotta and used more tomato sauce than called for as it didn't seem 'saucy' enough. Yummy!

Easy Tilapia with Wine and Tomatoes

Yummy and light dish! I baked mine in the oven at 400 for about 20mins and used a small drizzle of olive oil on my filets instead of butter. Used both basil and roma tomatoes that I grew. Easy and quick, paired nicely with steamed broc - and low cal too!
