Pumpkin Gingerbread
Delicious. I substituted 3/4 cup of pumpkin butter I happened to have for 3/4 cup of the oil and added more spices, threw in a bit of nutmeg, a tiny shake of black pepper and a pint or two of cardamon. My boyfriend doesn't like pumpkin but liked this saying it's more of a spice bread.

Too Much Chocolate Cake
Subbed in sugar-free pudding mix and used 2/3 cup applesauce and only 1/3 cup oil. The big winner was adding one of those VIA packets from Starbucks in with the hot water. This cake was really moist and amazing - will be trying it soon with different flavors of cake, pudding, etc. Looked beautiful with Satiny Chocolate icing and chocolate shavings on top!
