Butternut Squash Soup
This recipe is awesome. Even people who say they don't like squash love it. It's so creamy. I only use block of cream cheese (which is plenty), and I cook the squash in the microwave and scoop out the pulp into the soup. It is much faster, and I'll do anything to avoid peeling and cubing raw squash! Yum!
