Very good! I added only 2/3 cup of sugar and it was enough, actually the topping was way too much sweetness so next time I wont add that. Perhaps more blueberries?

Best Carrot Cake Ever

Awesome cake. I halved the recipe, used a bundt pan and added a bit (with a fork) of frosting. Dense and moist and rich with all the goodies. For sure going to make it again, probably add more baking soda to make it rise a bit more, try using less oil and adding more spices. But that is for personal taste. Reminds me of the truly best ever vegan carrot cake I had.

Marble Swirl Pound Cake

I halved the recipe, and I also used 1/4 cup less sugar (instead of 1 cup). I put in a lot of baking powder, so it really rose nicely. It was really good. My family really liked it. I also used a loaf pan, cause I don't have a tube cake pan. I like how it got crusty around the edges. Parents said it tasted better than the pound cakes from the store :) Thumbs way up!

Carrot Cake II

I've changed it around a lot and baked it again it was much better, more carrots, more raisins, less sugar, only whole wheat flour. But it is delicious, really moist and dense.

Zucchini with Chick Pea and Mushroom Stuffing

I liked it. Made it twice already, but the second time I didn't have mushrooms so I used onions and carrots. Hardly used any zucchini as part of the stuffing though. I dislike how it all seems to fall apart in the end, but maybe it is just me. The zucchini's I've used were fairly small though. It looks very pretty though!
