Italian Sausage Soup with Tortellini

Made this for my sister and brother in-law's first anniversary dinner and we all loved it! Used 1/2 beef and 1/2 pork sausage, and canned italian tomatoes. Fabulous recipe and will make it again.

Nordy Bars

Maybe I shouldn't rate this one. I have never had a Nordy bar before, so didn't have any preconceptions. I tried it because it used some of the ingredients I wanted to use - and i love butterscotch. But the butterscotch flavor was lost somehow, which is strange, since the only thing that could have overcome it was the marshmallows...anyway, despite my disappointment, the pan disappeared in very short order. It was certainly a viable cookie bar, just not what I was hoping for.

Ham and Beans

After 8 hours of soaking and 2 hours of simmering, the beans were still not quite done to my liking. That said, my husband nearly ate the entire pot, agreeing the entire time that the beans were not quite done. But great flavor, he kept saying. And it was. Thanks for the recipe - I'll make this again for sure!

Broccoli and Four Cheese Calzones

Very pretty. But too much dough. Or, not enough filling. Will make again, but halve the dough. Making the dough in the breadmaker was new to me, but I liked it a lot. Plus, it was a whole lot easier than mixing by hand, which is what I usually do with pizza. Would definitely recommend putting marinara on the side.

Cheesy Macaroni and Beef Casserole with Thyme

I liked this. My husband liked this. My mother-in-law liked this. My 3 1/2 year did NOT like this. Go figure. Maybe it was the Worchester. My only caution is that you must use sharp cheddar - it was fairly mild-flavored using aged baby Tillamook, which surprised me. Might try extra sharp next time. Would definitely be too bland with anything milder than sharp.

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

Can I just say how much I love Allrecipes.com? Where else can I search for a recipe that contains three ingredients that I wish to use for dinner and come up with something that everybody loves? This was very very yummy - like many other reviewers I used all red tomatoes, but as soon as our yellow tomatoes come in I'll make it with 1/2 and 1/2 as directed. Thanks for the keeper!

Honey Mustard Dressing II

Hallelujah! FINALLY, an antidote to my way too gloppy honey mustard dressing, which I used soy sauce in instead of lemon juice. The mayonnaise that I currently have is on the eggy side, so I would need to add more honey or mustard to overcome it, but even so, I really like this dressing. Thank you!

Baked Fish with Shrimp

As usual, the reviews were good, so I gave it a try. I was a bit skeptical - fish and shrimp? But it works. We liked it a lot. I used tilapia and also added a couple of chopped cloves of garlic to the sauce. A good romantic dish!

Vegetable Beef Minestrone

Am using this recipe again tonight, becuase my husband really liked it when I made it the first time. Said it was even better than his mom's, which is saying something. I add more beef (about 1 lb total) and use shell noodles instead of spaghetti, so it all comes out probably a bit thicker - but we like it that way!

Caramel Bars

Okay, these JUST came out of the oven and I can reasonably assure you that the life span of this pan is about 12 hours. I did as others and doubled the flour, oats and brown sugar. I increased the butter to 1 cup and that seems to give the crust a good consistency. I reserved 1 1/2 c for sprinkling on top. Allowed a few extra minutes in the oven to account for the added volume. These are really really really good. If my family doesn't want these again, I'll be quite surprised.

Chicken Tortilla Soup I

This makes fabulous soup, which is surprising to me, because I don't usually enjoy recipes that involve that many canned foods. But it's good! Thanks for a great recipe! Note: I have never tried it with the hominy.

Spanish Rice II

This is now a staple at our house. My husband loves it. It's got a kick to it, so my 3 year old doesn't favor it much. I've made this many times, but I still think about adding chicken broth instead of water...maybe next time.

Chicken Enchiladas II

I followed the recipe, except that I used 2 chicken breasts and used smaller tortillas (8 inches?). They were good, but rather on the bland side. Next time I think I'll add some fresh garlic and some cumin and salt.

Toasted Goat Cheese Olivada Salad

I have long used this site and often rely on the comments of others to guide my recipe selection and preparation. I have never reviewed a recipe, but this one, having only one review deserves many positive reviews. I served it to my husband as a main course and we both loved it. My variations were using pecans instead of walnuts, and omitting the olives (probably would have been even better with them, but there weren't any in my cupboard) and Olivada. Simple and delisioso - will definitely make this again and again.
