Hearty Ham Casserole

I also increased the amount of onion and added zucchini and cheddar cheese. And a smidge of salt. YUM. Husband gave it two thumbs up.

Peach Cobbler II

Reviewed: Jul. 29, 2009
This is pretty much what I think of when I think of cobbler. I followed other's modifications including using 1)9x13 pan 2)one cup boiling water 3)more peaches and 4)less sugar on fruit. The consistency and flavor are exactly what I was after. Thanks Jan Recipes!

Chocolate-Oat Toffee Bars

Reviewed: Feb. 28, 2009
I will definitely make these again with one change: I will line the pan with foil. Though I greased the pan, it was insufficient to overcome the oats and corn syrup and I ended up getting an upper-body workout digging these out of the pan. But like I said, I'll be making these again because they are good!

Squash and Pork Chops

Reviewed: Jan. 16, 2009
I love to search by ingredient on Allrecipe. That's how I get to find recipes like this that haven't been given too much attention. Earlier reviewers tipped me to cutting the squash thicker, which I did and it was cooked through completely. I also added a beet, since I had it on hand and that made that half pink, but it was good. Solid comfort food. Could be spiced up a LOT for more interest, but if you're looking for something warm and filling and non-challenging, this will do the trick.

Spinach Lentil Soup

Reviewed: Jan. 12, 2009
This was extremely good. I used beef kielbasa and brown rice. For the liquids added 4 cups chicken broth and 2 cups water. Any more would have been too watery. As I made it, this soup is a keeper at our house.

Creamy Rice Pudding

Reviewed: Aug. 31, 2008
Well, holy cow! Could a recipe have more ratings? Will one more even matter? Definitely try this one. I doubled the recipe and accordingly it took longer, but it was well worth it. And I didn't even have raisins! But I did have nutmeg, which I highly recommend using. Will use this recipe any time I've got additional rice.

This was surprisingly good - although I skipped the nuts altogether and only added a splash of olive oil and salt. Oh, and I added some bacon.

We really enjoyed this one!! I only had yellow potatoes on hand, but can't imagine that it would be any better with red potatoes added. Nice twist on mashed taters. Thanks!!

Lemon Chicken III

Reviewed: Feb. 18, 2008
This was really good, particularly since I had a few pounds of lemons brought to me recently. However, they were Meyer lemons and didn't impart quite the tart quality I would have liked in this dish. That said, it was still really yummy. Marinated for almost 2 hours and the chicken was extremely juicy, however, the little liquid couldn't sustain and my pan burned. Extra extra broth next time.

Spicy African Yam Soup

Reviewed: Feb. 18, 2008
This was good. Strange, but I think my palate doesn't take well with thyme. There was a particular spice that seemed off to me in this, but otherwise, definitely adaptable recipe. Peanut butter provides a nice background. I added couscous instead of rice. I will likely try again, since my husband liked it and I always appreciate meatless dinner recipes, but I may use vegetable broth and cut the thyme. Or perhaps it was an ingredient in the salsa that put me off. As my husband says, if the soup is good today, it'll probably be fabulous tomorrow.

Ultimate Irresistible Granola

Reviewed: Jan. 19, 2008
As many reviewers said, this smells wonderful when baking. I made many of the same modifications - additional oats, cut the oil. Also added vanilla and flax seeds and substituted maple syrup for part of the honey. As I write this my three year old is munching on a bowl of it and is asking for more. I think we'll keep this one. Thanks for the recipe!!

Thai Style Shrimp

Reviewed: Jan. 8, 2008
This was good. Wasn't as much flavor as I was expecting from fresh ginger and 4 cloves of garlic. I used shrimp and tofu and my usually thai-food phobic husband enjoyed it. Smelled really good!! Will certainly make it again.
