Carol's Arroz Con Pollo

Very good... works well if you substitute one pound of ground chicken or turkey (browned w/ paprika and spices like recipe, then added onions and peppers, et all and sauteed all together, added wine and broth then continued with recipe as written).

Easy Tilapia

I made this as a foil pouch "all in one" baked meal and it was very good. We will definitely do this again - next time on the grill. My method was: on a large sheet of buttered foil laid out asparagus; sprinkled w/ half the tomatoes and capers; layered tilapia; topped w/ remaining tomatoes and capers; drizzled with a scant 2 ounces white wine vinaigrette (I used Girards Champagne); fold up and baked at 350 for 35 min (my asparagus was thick stemmed and I left it in till they were fork tender - the fish stayed moist). I made one pouch per person.

Mediterranean Tilapia

This was wonderful tonight! I made the recipe to the letter and baked it on top a bed of baby spinach in a buttered 8x12 glass dish. Presentation to table was very nice and it was delicious to eat.

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

This is delightfully simple and really good. Tonight I made it with 3 oz of cream frache instead of the cream cheese and 1 tbs of fresh basil instead of dried - it was simply sublime!

Super Seven Spinach Salad

This is a fantastic recipe! The combinations are endless. For fruit we use fresh local and in season (we've tried peaches, blueberries, nectarines, kiwi, and apricots) and for nuts we use what catches our fancy(pecans, walnuts, almonds, or hazelnuts), and for cheese we've used blue, havarti, cheddar, swiss, jack, colby - all were great - we've never been disappointed. Rarely does my husband request a salad for dinner - but since I discovered this recipe last year he requests it on a regular basis now. Tonite were having it with apple, walnut, blue cheese, dried cranberries, and thinned blue cheese dressing.

Penne with Asparagus and Mushrooms

My husband and I made this based on the other reviews (it had 4 1/2 stars when we made it on 12/19/07) and this was definitely an emperor with no clothes!!! As with all recipes off this website, we made it first time through with no modifications to the original recipe; the result was bland and gluey.
