About this Cook
I grew up in a cooking household and started learning to cook at the age of 7. Today I'm a Mom with two kids (ages 15 and 11) who love to cook too! We like to camp so we're always on the lookout for recipes that can be prepared outdoors with only a few ingredients.
My favorite things to cook
Baking - because it's not something I do every day - cookies, cakes, cobblers, muffins, and my husband's favorite apricot scones.
My favorite family cooking traditions
Making Christmas cookies... also hosting big family holiday dinners. Another fun tradition is New Years' Eve when we make a meal on all appetizers - my kids' favorite dinner because anything goes!
My cooking triumphs
A few years ago I made beef tenderloin for 20 people. The roast cost $80 at the local farmers market and I was terrified of ruining it! It took longer to cook than expected, and dinner was late, but it tasted great and I found it's pretty difficult to wreck such a wonderful cut of beef.
My cooking tragedies
Mistakes happen when I rush. Once while making my favorite chocolate cake I forgot to add sugar! It didn't rise, started to turn black, and we won't even talk about how it tasted.

Slow Cooker Beef Stroganoff I
What a wonderful surprise! Such great flavor and texture from so few ingredients and little effort. I had 1.5 lbs. of beef and only one can of golden mushroom soup so I improvised by adding 1 1/3 cups beef broth instead of the water. Started with frozen beef cubes.

Nanny's Steamed Cranberry Pudding
I chose this recipe over the other cranberry puddings because of the ingredients - especially the cinnamon and nutmeg. We love nutmeg, but 1 tsp. is WAY too much - will reduce to 1/4 tsp. next time. Also experienced same problem as previous reviewer - my cranberries were clustered in the center. Using a pudding mold instead of a casserole will probably solve this problem. Will place a rack in bottom of stock pot next time.

Neapolitan Cookies I
Made the following substitutions for Christmas: no chocolate layer, instead add chopped red candied cherries to one layer with red food coloring, and green candied cherries to another layer with green food coloring. For the white layer I used chopped blanched almonds, instead of walnuts, and the almond extract. Made a batch as soon as they were frozen and then another two weeks later - the flavor really intensified over time and the texture was better too!
