This was a great recipe - I'll definitely be making it again. No boiling the regular lasagna noodles makes this super easy as far as clean-up. The only change I made was adding one beaten egg to the ricotta, mozzarella, spinach mixture. If you need a really easy lasagna recipe, don't hesitate to make this one!

I enjoyed this especially because it is healthy, but it was also tasty and flavorful. My husband doesn't like zucchini, but he ate a portion anyway. I baked this covered with foil for 20 minutes then removed the foil, sprinkled some parmesan on top, and baked it another 15.
