Corn Tortilla Quiche
We made this today for brunch. It was very good. We used turkey sausage and ricotta cheese because that was what we had on hand. Great recipe.

Linguine with Chicken and Sauteed Vegetables
I love this recipe and have made it several times. I just bought some garlic olive oil and used that. I also change the vegetables depending on what I have on hand.

Lasagna Spinach Roll-Ups
I made this for my vegetarian sister-in-law and we ALL loved it, used fresh spinach and jarred spaghetti sauce. It made enough that we all ate it the next day for lunch.
