Chocolate Chip Banana Muffins
I followed the other suggestions - 1/2 applesauce for the oil, 1/2 whole wheat flour for the white. My family loved these muffins!!

Southwest-Style Egg Rolls
I make these all the time and my family loves them. I usually double the recipe, add at least a cup of chicken and less spinach. I wrap the filling in tortillas and bake.
