We made this for dinner the other night and I loved it! My husband said it was good, but needed more cheese (we limited his though since we are watching his cholestrol). My mom also liked it, but she's also a cheese fanatic and added more to her bowl. :) Definitely healthier then cream based dishes...will make again. Thank you!

This is how I end up making my potato salad also, except I add pickle relish to add a bit of flavor. I also add hard boiled eggs and cheddar cheese.
