Greek Orzo Salad

My family loved this! The only modification we did was to use elbow macaroni instead of orzo. The flavors were delicious and it was very light and refreshing. The artichokes are a MUST- they are what really make this special. Great!

Coconut Curry Tofu

This was really good! It was easy to make, but slightly time-consuming chopping all the vegetables. I pretty much followed the recipe, although I stir-fried the mushrooms and tofu together in some stir fry oil before adding them to the sauce. I hoped this would avoid the tofu falling apart like others said it did, but it still crumbled slightly when stirring the sauce. No matter, though- it was delicious and very filling. TONS of vegetables! We served this over white basmati rice. Thanks!

Suki's Spinach and Feta Pasta

We really liked this recipe. I made some very slight modifications- I added the crushed red pepper to the onions and garlic so it would infuse into the oil a little bit (we like spicy food!), then when the onions were almost done I threw in about a pound of shrimp. As soon as both sides turned pink, I threw in the rest of the vegetables. If you like spinach, I would recommend adding a whole bag- 2 cups looks like a lot but cooks down to less than half! The feta added a great creamy consistency. A great dish!

Cajun Shrimp Orecchiette

This was delicious! I couldn't find orecchiette do I used whole wheat rotini instead, and it worked out great (the sauce was so good, no one noticed the whole wheat pasta). There is a lot of butter in this recipe, but it's surprisingly light. I like this type of sauce much better than a heavy cream sauce, and the amount of spiciness was perfect.

Asian Noodles with Chicken

My family really enjoyed this. I made it exactly as the recipe stated, but now that I've made it, I will play around with other vegetables when I make it again, possibly snow peas and broccoli. It's very easy to make and the sesame oil on the pasta was a great touch.

Great Green Salad

This salad is really great. I absolutely love avocado so I doubled the amount and we also added tomatoes, but otherwise I followed the recipe. The dressing is very good. I made this for my family and they requested it again the next week. Very customizable and you can make the dressing ahead of time and just toss it with the veggies when you are ready to serve. Great!

Roasted Cajun Potatoes

We really liked these. I followed the recipe exactly, although I added a little bit more parsley while tossing everything together- maybe a total of 3 tbsp. I found it easier to cover my baking sheet with aluminum foil, then greased it with a little olive oil, to make for easier clean up. Flipping these can be a little tricky, so be careful- otherwise they were very easy to make and were a great complement to the meal. I'm looking forward to experimenting with other types of flavors!

Blue Cheese Crusted Filet Mignon with Port Wine Sauce

These were great! The filets were perfectly tender (we like them medium rare) and you could literally cut them with a butter knife. The flavor of the blue cheese added just a hint of tanginess that was not at all overwhelming. The port wine sauce was also great, although it did not end up making much- this was fine for us, as we didn't need much, but if you like a lot of sauce you may want to make more. Excellent, luxurious, and a great meal!

Savory Crab Stuffed Mushrooms

Made these for Christmas Eve dinner...they turned out PERFECT. We followed the recipe exactly, although we halved it to make only 12 mushrooms. We found a 12pack of the same size mushroom caps with short stems, which ended up being great since regular packages of mushrooms can come with all sorts of different sizes. Everyone loooooved them, and I will definitely make them again!
