About this Cook
I am a stay-at-home mom of 3 great kids with a wonderful, hard-working husband!
My favorite things to cook
I love to cook all kinds of dishes, although I am not much of a baker. My kids are not picky eaters, and I think it is because I try not to make the same things all the time. I do have several favorite that I make alot of (meatloaf, Grandma's Salmon Cakes, lasagna, good ol' southern fried chicken, Etc). But I will try any recipe once!
My favorite family cooking traditions
Cooking things my mom and grandmother made when I was little... makes me happy!
My cooking triumphs
Just cooking 4-5 times a week should be rewarded with a trophy!!!
My cooking tragedies
Did I say I am not much of a baker?

Erica's Delicious Slow Cooker Beef Roast
Made it just as the recipe says to (except I almost doubled it) and it turned out wonderful and moist. Makes a great gravy for rice or potatoes.... yummmmmmmmy!

Sherry Sour Cream Chicken
I made this last night and my 3 kids, who are trying to get picky on me, and my husband loved it, as did I!!!!! I did take the advice from previous posts and added finely diced onions and 3-4 cloves of garlic. My husband isn't a huge fan of rosemary, so I just used and italian seasoning blend in it. We gobbled it up and I had some pasta too for the extra sauce. Will make again for sure!

Easy Italian Sausage Lasagna
It was good, my husband and kids loved it. I did change a few things. I put 2 cloves garlic in the pan with the sausage. I whisked 1 egg into the ricotta, and added some dried Italian Seasonings to the sauce. I also watered the sauce down a tad (about 1/2 cup water), b/c I didn't think it was enough. I think there needs to be an additional 8 oz can of tomato sauce added to the recipe, I only had enough meat sauce for 2 layers. But i will make this recipe again!
