Roasted Chickpeas

The chick peas exploded in the oven! I suspect that they are sort of like popcorn - the internal moisture caused some of them to pop. I have about a dozen on my oven floor. Other than that, they tasted great. Next time I will try putting the oven at 350 and roast longer... this may eliminate the popping!

New England Clam Chowder I

I used all of the clam juice and did not add water. Good flavor. I had to cook the potatoes for 20 mins with the lid on to get them done. It is very soupy and not thick, so you might want to make a roux if thickness is an issue for your personal taste. Will make this again in a heartbeat! I will probably use 2% milk or whole milk next time and make a roux for thickness - cuts down on the calories!

Smoked Gouda and Leek Chicken

This was ok. It would have been much better if the chicken was seasoned. I think marinating the chicken would have added more flavor to the recipe. The chicken was flavorless, the filling was good. FYI - I did not add the gouda to the frying pan to melt it. I had very thinly sliced gouda that put directly on the chicken. I then put the cooked leeks on the gouda and rolled it. Then rolled it in the ham. The filling came out fine. It wasn't a messy, goopy mess this way. I'd make it again, but marinate the chicken first, or somehow season it.

Pizza Casserole

In what is an absolute first for Allrecipes.com users, I actually made this recipe as it is written - no substitutions, lol. It was very good. It actually tastes better the second day. I will make this again - everyone liked it. Served it with a salad and dinner was done.

Easiest Egg Nog

Easy and tasty. Took it to a party and all I had to do was rinse out the punch bowl when we were getting ready to leave - everyone drank all of the egg nog! It was very popular with kids and adults.

Chicken and Portobello Rollups

The vegetables had a great flavor. The chicken was very, very bland. We did not add the milk to the cream of mushroom soup, as it would have been WAY too watery. I would make this again, but I would marinade the chicken breasts first. The mushroom soup does not add enough flavor to compensate for unseasoned chicken. I think this recipe would be 4 or 5 stars if it was re-engineered a bit.

Grilled Salmon I

This is a very good recipe. I made it exactly as listed. Next time, I would cut back to about half the amount of oil suggested. The flavor was good, cooking time was accurate. Nice way to have salmon. Will make it again, for sure.

Fresh Tomato Salsa

Very good recipe! We had to use canned chopped green chiles (old el paso)as a substitute for the chiles. It tasted great. It's good if you let the tomatoes drain a bit so they aren't watery, or pat them dry after you chop them, so the salsa isn't so watery. Some liquid is good, but nothing is worse than dribbling stuff down your shirt at a party. We brought this salsa to a party and there wasn't one piece of tomato left by the end of the night. My friends have no shame...

Mushroom and Swiss Chicken

No one in my family liked this recipe. We followed the recipe exactly as written. The vinegar and creole spice just didn't match up well with the mushrooms and swiss. There were too many different things going on with this one. We were all very disappointed. Normally, we tend to like highly rated recipes. This is one of the few that just didn't cut it. Sorry!

Colleen's Slow Cooker Jambalaya

Way too hot! And I only put in 1/2 tsp of cayenne pepper. Other than that, very good. I would hold back on the cayenne pepper, since the Cajun seasoning already has plenty of cayenne pepper in it.

Barbecue Beef Cups

Very tasty. I used taco meat instead of bbq sauce. It was great! Served it with a salad. Easy dish. I think that this would also be a great appetizer if you cut the biscuits in half and used a mini muffin pan.

Ginger Lime Dip

The mayo taste is overpowering with the current proportions, so I added more ginger, honey, and lime. it still didn't taste all that great. I think I would make a different fruit dip before I tried this one again. Too bad, it was so easy!

Cuban Beans and Rice

Very good. I use couscous that is prepared in vegetable broth. It's also good if you put a piece of provolone or jack cheese on top of your serving and microwave it for 10 seconds to melt it. Black beans can be used instead of kidney beans. Canned corn can also be thrown in there.

Fra Diavolo Sauce With Pasta

We will eat this again, it's very good. For me, it was a little too hot - you might want to cut back the red pepper to 1/2 tsp - cook the sauce for a while and taste it to see if you want more. Also, there is no way that this will serve eight people and there is too much pasta for the amount of sauce. Flavor is very good. It's very easy to make. We really enjoyed it. Next time, I'll saute up some onions and celery to put into it, also.
