I was looking for a very low Calorie recipe to enjoy as a snack or at breakfast time, and boy did this recipe deliver!
I followed the measurements in the recipe exactly, but added a spoonful of raisins, 1/4 tsp of cinnamon and a pinch of mixed spice to give them some more flavour.
They are quite small muffin, and obviously much denser the the standard variety, but they were still delicious and the bran gives an interesting texture.
I was very skepitcal, as the recipe includes no fat, but they came out remarkably well, and the lack of much sugar isn't really noticeable either.
I will certainly make them again, perhaps with grated carrot and nutmeg instead of apple and cinnamon!
