Kona Chicken

We loved this. I did have to make a couple of alterations, based on what I had on hand. I didn't have quite enough honey, so I made up the difference with molasses. I also used boneless skinless chicken breast and regular onion. I thickened the sauce with some cornstarch and served it over rice with some steamed broccoli. My husband licked his plate! It was awesome!

Good Old Fashioned Pancakes

These were great! My four year old said I was "the best cook ever!" How could I not give it five stars? I did add a bit of whole wheat flour - I didn't have quite enough white flour.

Salsa Chicken Rice Casserole

This was a great recipe. Leftovers were great too. I did make a few changes that others suggest... I cooked the chicken and onion together in a skillet, used rotel, rather than salsa, added some taco seasoning and since I didn't have any jack cheese, I just used cheddar. DH says this one is a keeper for sure!

Bean 'N' Rice Burritos

This recipe was a huge hit, even our three year old loved it! I did make some adjustments. I sauted some onion in a bit of oil, used fresh garlic instead of powder, added an extra can of beans and adjusted the spices a bit for the extra beans. Like a previous reviewer, I thought the beans to rice ratio was a bit off. Two cans of beans to one can of tomatoes is perfect for my family. I was really suprised my family of carnivores didn't even miss the meat! UPDATE: DH regularly requests this for dinner. I think it may be his new favorite!

Taco Soup VI

Outstanding and so easy! I use just one package of seasoning as we didn't like it quite so spicy. My suggestion would be to add one packet of taco seasoning and then taste it. ETA: This is a regular at our house and it is great with chicken too!

Tomato Spinach and Basil Soup

This is a very good recipe, but like some of the others - I altered it a bit. The onions do need more time to cook and I used the fine setting on my mandolin to get them much smaller than just chopping. I also added a 28 oz can of petite diced tomatoes, so it does have a chunkier texture. You will need to adjust the spices accordingly.
