Baked Ziti III

Different than I was expecting, but fantastic! After reading many reviews, I tossed the pasta in the sour cream, browned my ground beef with italian seasoning, salt, & pepper, used 1 jar of italian sausage spaghetti sauce & 1 jar of mushroom spaghetti sauce, and increased both cheeses by about 2 ounces. I made it all in 1 deep 9" x 13" pan and it barely fit. The result was very creamy, flavorful ziti - a ton of it! My husband and I ate it for 4 meals & still had nearly half a pan left. Next time I will try separating it into 2 smaller pans and maybe put some mozzarella on top (not just the parmesan) for a browned cheesy crust. Fantastic recipe!

Easy Shake and Bake Chicken

Excellent flavor with the addition of garlic powder & onion powder. Next time I'll try just butter spray & a cast iron skillet in the oven, because I ended up with soggier crust than I like. Still tasty!

Rempel Family Meatloaf

This was a nice change from standard tomato sauce/ketchup style meatloaf. I was short on a few ingredients, so had to change the recipe: only used 1 egg, used about 1/3 cup of half ketchup/half tomato sauce mix, added a couple teaspoons of worchesterchire and a dash of liquid smoke (per previous reviewer's suggestion), substituted a generous handful of steak seasoning, onion powder and garlic powder for the onion soup mix, and added about 1/4 cup more crackers. I put half the meatloaf in the pan, layered 4 slices of pepperjack on top, then added the rest of the meat. Topped with a tomato sauce/honey/worchesterchire glaze and baked 60 minutes. The result was a meatloaf that tasted cheesy, slightly spicy, and char broiled, and was more firm than traditional meatloaf. My husband doesn't like mushy tomato-y meatloaf, so he loved this. Overall, a great recipe to make as is or play with. Thanks Rempels!

Two Tier Strawberry Pie

Very easy & delicious recipe, with some of the suggested modifications. I didn't have grenadine or cream, so I replaced cream with 3/4 container of light cool whip and used an extra 1/3 cup of water and 2 tablespoons of strawberry jello in the topping. Boiling the jello topping for 5 minutes, then chilling for 1/2 hour made it a little too hard set to mix in the strawberries - so I microwaved it for 30 seconds and it worked perfectly! Probably will mix in the strawberries right away next time I make this, which will be soon!

Sausage Spinach Alfredo Lasagna

Flavor is good, but definitely needs extra sauce. I made it as written, except for the addition of fresh sauteed mushrooms & I soaked my oven-ready noodles in hot water for 20 mins ahead of time. The noodles were done, but overall it was much too dry - especially the top. We still enjoyed it with bottled marinara on top to moisten (didn't have any more alfredo), but I would double the alfredo and add extra cheese. A layer of sauce for the top would be better, too.

Best Chocolate Chip Cookies

My new favorite cookie recipe! I have tried several recipes lately & these are by far the best - super chewy, nice and thin, soft, and not at all cakey. A little hard to tell when they're perfectly done, but well worth watching them closely! Yummmm.

Waikiki Cornbread

This is the best sweet, cake-like cornbread! Not a dense, savory variety so try a different recipe if that's your preference. I halved the recipe but still used 2 eggs and had no problem with crumbliness. Delicious with white chicken chili II (this site) and just as good the next 2 days with leftovers and breakfast. Surpisingly full corn flavor for just an 1/8 cup (in half recipe) of cornmeal. My half recipe fit perfectly in a deep 8x8 square pan & looked as good as it tasted. Can't wait to make this again!

White Chili II

Excellent recipe as is - but a few variations make a thicker, spicier, 5-star chili! After reading several recipes and a million reviews, I changed the following: pureed 2 cans of beans in my blender to thicken, added 1 can sweet yellow corn, added 1 chopped jalapeno with about half the seeds removed, reduced the broth to 1 1/2 cans, added garlic powder, onion powder, and 1 heaping teaspoon of cilantro, and shredded my chicken. I sauteed the onions, garlic, and jalapeno until tender, then threw it in the blender with the beans (personal preference for no onion pieces & to thicken). Tossed this and the rest, including raw chicken into the crockpot on high for 2 1/2 hours. Shredded chicken, cooked for an additional 2 hours, & served with Hawaiian Cornbread. Truly fabulous & hearty chili! Just the rice spice & texture. Leftovers were amazing!

Chocolate Chip Cheesecake I

This makes a dense, firm, not too sweet cheesecake. I only gave it four stars because I prefer a creamier cheesecake and some of my guests did not love it. I didn't have any graham crackers, so just put it on a regular pie crust that I pressed into my springform pan and trimmed. I'm sure it would be even better with the chocolate crust. But it looked beautiful and many people asked if I bought it. I put a layer of melted peanut butter chips on the bottom, mixed extra mini chocolate chips into the batter, and splattered lots of both melted chips on top. Overall a pretty and tasty cheesecake for those who love this texture.

Best Brownies

Despite reading tons of reviews and being careful not to overmix, these just did not come out right. A little too cakey for me and really not enough chocolate flavor, but easy to make and unique tasting, so these might be just right for others - good luck!

Pot Roast Dips

Outstanding and so easy! After shredding the meat, I cooked it in the sauce until absorbed and it was so full of flavor - no dipping sauce needed. Substituted 2/3 can of beer for the water with excellent results. Super flavor, but a little salty, so might try 1/2 packet of onion soup next time.

French Toast Bake

Very good recipe - not sure exactly what the texture is supposed to be like but the flavor was fantastic. I might use slightly older or thicker bread next time (used 1 day old french bread,sliced 3/4 inch thick)to try to get a crispier result. Definitely worth a try with peaches - yum!
