I'm an ex-pat American living in the Greater Copenhagen area (Hellerup, just North of CPH). I'm married to a terrific Danish man and have two wonderful, bilingual teenagers! I love baking and making great salads. In the winter I love one-dish comfort food that warms you up. In the summer I enjoy making salads, smoothies, dishes with fruit, and making homemade Danish elderberry flower cordial or rhubarb concentrate to use in beverages, both with and without alcohol. At this moment, I am baking Blackberry Oatmeal Bars. Making a traditional Danish Christmas dinner consisting of Crackling Pork, Warm Red Cabbage, candied potatoes and Roast Duck stuffed with apples and prunes for the first time and having everything turn out fabulously!
