Taco Bake

This was a huge hit. I say that because when my husband first saw the recipe in my hand, he immediately began to complain. Of course, I ignored him. When this meal was prepared, it tasted so good. My husband even said (and I quote), "When you set your mind to cook Mexican food, you do an awesome job!" The only changes I made were the same suggested previously. I added a can of olives, Mexican corn, and seasoned diced tomatoes. The green chili’s made it a wee bit spicy, but no one seemed to mind. I took someone's suggestion and baked without the cheese topping for 15 minutes, then added cheese topping (and crumbled tortilla chips) and baked a remaining 10-15 minutes. I used a mixture of sharp cheddar and spicy Monterey jack cheeses. We added sour cream and guacamole on our plates. I served with a lettuce salad with tomatoes and salsa. This recipe will be one of my keepers.

Fresh Herbed Halibut

This was very good. The ONLY change I made was to add lots of butter! I also baked it at 400 for 20 min. My husband was all prepared to make his "famous" lemon-butter sauce, but with the butter and lemon juice already cooked with the halibut, he didn't have to. He really enjoyed this dish!

Salmon Fillets with Creamy Dill

I gotta admit I had my doubts about this recipe but I tried it anyway because of all the good reviews. I cut the recipe in half as suggested, and it made a perfect amount. When my husband (the picky eater) tried it, all he said was "OH, WOW!" over and over again. He absolutely LOVED it. I loved it, too and will most definitely keep this recipe and use it again! I did not have any of the fresh herbs, so I used dried and adjusted accordingly. I used dijon mustard. YUMMY!!!

Southern Candied Sweet Potatoes

This was very tasty. The only thing I did differently was use 1/2 white sugar and 1/2 brown sugar. I had some Asian yams lying around, so I used this recipe and they turned out delicious!

Garlic Croutons

This was very good. I used someone's suggestion about buttering the bread first before cutting. I seasoned with a little salt, but it probably didn't even need it. I also added parmesan cheese just before baking. Made it for a caesar salad tonight.

Beef Fried Rice

Very good recipe. The only changes I made were to cook the beef with fresh pressed garlic and sliced onion. I also added more sliced onion to the remaining ingredients and added some chopped zuchinni, sliced mushrooms and frozen peas. I increased the soy sauce to 5 Tbsp. I also scrambled the eggs for simplicity. My family liked this recipe.

Tomato Bisque II

Yes! This was wonderful. My husband is now on his second bowl. I only made minor changes: I used three 14-oz cans of the stewed *seasoned* tomatoes (mine had the basil, garlic & oregano). I kept the rest of the ingredients the same except I doubled the amount of basil and I used half n half instead of milk. I added a dollop of sour cream to the bowl of soup. We thought it needed a bit more of a bite, and my husband thought of adding Tabasco. We added about 6 drops of Tabasco to our bowl, and it was just the right touch to add just the right spice!

Baked Salmon II

This is a keeper for sure! I noted some of the modifications others made, and I made the following changes: increased garlic to 4 cloves of pressed garlic, decreased olive oil to 1 Tbsp plus added 2 Tbsp melted butter, decreased basil to 3/4 tsp, decreased salt & pepper to 1/2 tsp, increased lemon juice to 3 Tbsp lemon juice, and I used 1 tsp fresh chopped cilantro instead of the parsley (yes! that was good). I wish I had some dill to add, but I didn't. I had two sm filets and marinated in ziploc bag. I placed the filets (with the marinade) in foil just to minimize cleanup, sealed the foil, then placed them in a pan (I didn't have a glass dish) and baked at 400 degrees for 20 minutes, then broiled uncovered for almost 5 minutes. I served with rice and used the juice to pour over the rice. OH! This was good!!!!!

Grilled Mahi Mahi

My husband needed a Mahi Mahi recipe fast, so we looked online and found this one. We both were so amazed at how wonderful the flavor is! He only had two fillets, and he kept the fillets whole and did not cube them. He used about three cloves of fresh garlic instead of the stuff in a jar. He also used red wine since we didn’t have any white on hand. We also didn’t have any diced tomatoes with the peppers; but we did have a can of diced tomatoes with basil, so he used that and added a bit of his dried red peppers. It was raining, so he put it into the oven and baked it at 450. We had no idea if we’d like this dish; so as soon as it came out of the oven, we both sampled it. It was so delicious that we ate it immediately. (We forgot the cheese.) The fish was very moist. This is a very easy recipe and the flavor was awesome! We both said we would definitely make this again.

Au Gratin Potatoes II

This was very delicious. I took a suggestion posted here and used cream of chicken soup instead of the cream of celery and I added 2 pressed cloves of sautéed garlic. The whole family loved this one. I didn’t get a chance to make the cornflake topping, and it was very good without it.

Hershey's ® 'Perfectly Chocolate' Chocolate Cake

You can't go wrong with this one! It's a deliciously moist cake. The ONLY change I made was to use butter instead of the 1/2 cup oil in the cake (I prefer the taste of butter). I lined the bottom of the pans with parchment paper, so that I don’t have to do all that greasing and flouring. Cakes slide right out of the pans. My hubby loves this receipe, and one evening when I was tired and he wanted cake, he got up and made this cake himself! It's addictive so waistlines beware!

Shepherd's Pie VI

My hubby always asks his mom to bake her famous Shepherd's Pie when we go to visit. I have never made it for fear that it would not be as good as hers and he wouldn't want to eat it. This recipe was fantastic, and everyone gobbled three helpings! I followed some of the other suggestions here and cooked potatoes and carrots together in the same pot. I mashed the potatoes with 8oz sour cream and salt/pepper. I used green onion in the mashed potatoes. I sautéed 2 pressed cloves of fresh garlic in butter with the onions to use in the meat mixture. I cooked the meat mixture with 1/4 cup Worcestershire sauce and added seasoned salt to taste. I bumped up the ketchup to 1/4 cup, but I think half that (2 tablespoons) would have been fine. I used 1 packet of brown gravy mix with 1 cup water instead of the beef broth as suggested. And I mixed the ground beef with about a cup of frozen mixed veggies (peas and corn). Everyone loved it; it was definitely a huge hit!
