Eating my way through Italy
About this Cook
I've been cooking since I was a young boy. I started by learning how to make lemon squares, pancakes, oatmeal cookies, and snickerdoodles. Anything sweet! Now, I am much more focused on healthy food using fresh local ingredients. Thank goodness I live in one of the cooking Meccas of the world.
My favorite things to cook
I love a big pot of Chicken Vegetable soup on a Sunday night (using my Le Creuset Dutch Oven). It lasts throughout the week and is completely healthy... I only use vegetables and roasted chicken w/o skin. I also love cooking Southwestern (with Margaritas), curry, homestyle, and California cuisine.
My favorite family cooking traditions
Some of my favorite memories are cooking together as a family. Making Enchiladas, Homemade Root Beer, Homemade Ice Cream, and cookies together. Every Christmas my family gets together and makes my Great-Grandmother's Chex Mix. We love it!!
My cooking triumphs
My most requested dishes: Meatloaf, Pork Loin with Apple Cream Sauce, Chicken Marsala, Chicken Curry, Strawberry Salad, Beef Stir Fry with Red Pepper Glaze
My cooking tragedies
I always cook custard too hot and long and get scrambled eggs. I'm too impatient.

Licorice Caramels
This recipe is amazing. Everyone loves it, even those who dislike licorice. Make sure you use black paste coloring, the black liquid from grocery store makes it brownish.

Award Winning Soft Chocolate Chip Cookies
This is a great recipe, but what I like about it is you can change the flavors and still have a great cookie. I've used white chocolate chips, lemon pudding, and lemon extract for lemon cookies. I'm sure other pudding combos would work too.

Beef Stroganoff III
A good solid Stroganoff to begin with, but I added 3 oz cream cheese to push it over the top. I also added some pepper flakes to give it a bit of heat.
