Very yummy! I did make some substitutions to make more healthy, and it was still great. I used 4 egg beaters to eliminate fat and cholesterol from regular eggs, 1/2 cup canola oil & 1/2 cup unsweetened applesauce, substituted apple juice in place of water, reduced sugar to 1 cup white and 1 cup light brown sugar, 2 cups unbleached flour, and 1 1/2 cups whole wheat flour. I doubled the cinnamon, and baked mini muffins for 13-14 min. I made 48 regular mini muffins, and then added some mini chocolate chips to the rest of the batter and made 36 more pumpkin/chocolate chip muffins. The regular muffins were great, but we loved the chocolate chip ones even more. Never missed cutting the sugar by 1 cup, as it was sweet enough, and we love our sweets!
