Fabulous Zucchini Grinders

Very good for a vegetarian sandwich. I did use an extra zucchini to bulk up the filling. Next time, I will consider substituting parmesan for half the mozarella to give a little more flavor. I also used the tip from another reviewer to place some of the cheese in the roll first so it doesn't get too soggy.

Chicken Enchiladas V

Very good. Similar to the recipe I have been using for enchiladas but a lighter, not so rich version. I add a chopped zucchini to the filling to blk it up and get in some veggies. My family doesn't even know it's there.

Delicious Raspberry Oatmeal Cookie Bars

Very good but not amazing. I didn't have a problem with the oatmeal part crumbling as some reviewers did. I cut down on the sugar in mine by using Orchard raspberry preserves instead of jam and also using Splenda brown sugar blend.They were quick and easy and made with ingredients I always keep on hand, but I felt like they were missing something. Next time, I will try adding some cinnamon to the oatmeal mixture and see if that helps. Overall a good recipe though.

Janet's Rich Banana Bread

Quick and easy, yet you don't have to sacrifice quality. I made the recipe as written with the bananas sliced. I'm only giving this 4 stars because I agree with the other reviews that you should mash the bananas and also add an extra banana. I made a half recipe and it made 2 mini loaves perfectly (baked for 30 min). This is the quickest banana bread recipe I have ever made and I will definitely be making this whenever I want a quick banana bread fix.

Green Bean Bundles

This is a favorite holiday recipe for my family. Granted I don't go to all the work of making bundles and finishing in the oven. I just blanch the green beans, make the dressing (I add a little more vinegar, but I like the acid), and topr with crumbled bacon. By the way, definitely use bacon fat instead of butter in the dressing. It really makes a difference.

Banana Sour Cream Bread

Amazingly good and easy. I like the cinnamon touches in this recipe and I find myslef sprinkling any extra cinammon sugar over the batter before it goes in the oven.

Spicy Kielbasa Soup

We weren't big fans of this soup. It just seemed bland. Next time I will try making the soup with regular kielbasa and see if that makes a difference in the flavor (the turkey kielbasa that our store sells is pretty bland). I might also add another can of tomatoes.

I'm giving this recipe only 4 stars because it was too salty. Next time I'll half the salt. Be sure you use the full amount of jalapeno or it will be extremely, extremely mild.

Curry Mango Chicken

This was a good base recipe but a little overpowering. I'd suggest cutting the spice mixture for the chicken in half and adding a little oil or water to make a rub. I loved the flavor of the rice, but I think that next time I will cook the rice separately (adjusting liquid for type of rice and under cooking by 5 min), add the remaining rice ingrediants with a splash more lime juice, and then finish in the oven.

Savory Garlic Marinated Steaks

Seriously awesome marinade! It's nice because the final flavor doesn't lean to far towards Italian, Asian, or spicy. I marinated our steaks overnight, pan fried them, then served them sliced over a salad. They were great!

Day Before Mashed Potatoes

These were good. Trying to make things easier on myself and my small kitchen, I made these for Thanksgiving this year. The whole family seemed to enjoy them and I liked them as well. The only thing I would mention is that with the sour cream and the cream cheese in them, they didn't seem to go witht he gravy as well. However, these would still be great with steak, meatloaf, chicken, etc.

Good basic biscotti recipe. I didn't have any problems with it. I added slivered almonds to half of my batch and cherries to the other half. They came out great.

Brazilian Fish Stew

I was surprised by just how good this turned out. Everyone in my family loved it, including my 20 month old (he had 3 bowls). After reading some of the other reviews, I decided to use only 2 peppers and I think this number is just right. It was a quick weeknight meal.
